I can only speak from experience, and speaking from experience, I would have to say that this is, hands down, the best blueberry cream cheese pie recipe I’ve ever made.

Ingredients

For the Crust:

2 cups all purpose flour

1/2 tsp salt

2 tsp sugar

3/4 cup cold butter, cut into 1/2-inch pieces

4-7 tbsp ice water

For the Pie:

8 oz reduced fat cream cheese

1/2 cup low fat sour cream

1/2 cup sugar

2 eggs, divided

1 tsp vanilla extract

zest of 1 lemon

pinch or two of salt

3 cups blueberries, fresh or frozen (don’t thaw if using frozen)

2 tbsp cornstarch

1/4 cup sugar

1 tbsp fresh lemon juice

1 tsp heavy cream or milk

2 oz. (4 Tbs.) frozen vegetable shortening, cut into 4 pieces

5 Tbs. ice-cold water

1 Tbs. fresh lemon juice

For the Filling:

2/3 cup granulated sugar

1-1/2 oz. (1/3 cup) unbleached all-purpose flour

1 tsp. finely grated lemon zest plus 1 Tbs.

Juice (from 1 medium lemon)

1 box of blue Jell-O (you will only use half of it) NOT sugar-free

1/4 cup of hot water (boiled not from the tap)

1 6 oz container of low fat or non fat Greek yogurt – vanilla flavor

4 oz of Cool Whip or other similar brand of whipped topping. I usually buy Truwhip because it is 100% natural and gluten free. It also has no hydrogenated oils.
