Pan Sauteed Cod With Tomatoes & Capers

Cod is a wonderful, firm fish to work with and it’s mild taste allows for the use of so many different spices and seasonings. Add a simple side salad to this entree and you’ve got a healthy, quick meal on deck!

Serves 4

Ingredients:

2 pounds of fresh (not salted or dried) cod fillets

14.5 ounce can of no-salt diced tomatoes ( I use the basil, garlic and oregano flavor)

1/3 cup of capers

1 Vidalia onion, chopped

3 tablespoons olive oil

Salt & pepper to taste

Preparation:

Rinse fillets under cold water, pat dry. Season with salt & pepper on both sides

To a medium skillet, add the olive oil and heat until a slight shimmer appears on the surface

Place seasoned fillets in pan, cook until opaque (approximately 10 minutes)

Pour tomatoes over fish and reduce heat to low

Add onions and capers..cook for an additional 5 minutes

Remove cooked fish from skillet to a plate, top with tomato mixture

Serve with a side of brown rice and steamed vegetables for a complete meal!”
