What if I told you — you can make a departure from gluten breaded Chicken Parmesan because you can achieve better flavor? Would you be up for trying it? Good, because if you make your Chicken Parmesan this way you may not want it the old way again.



I attribute the rich flavor of this variety of gluten free Chicken Parmesan to two things – the coconut flour used to bread the chicken and the rich flavor of Francesco Rinaldi Pasta Sauce {it’s made by Italians you know!}

My husband and I enjoy Italian food so much, we served chicken parmesan at our wedding reception. This dish is an easy recipe to make and it makes a bunch. So once you have it ready you’ve created an evening off the following night because all you’ll need to do is re-heat leftovers and enjoy again. 

To keep this meal completely gluten free you can pair this chicken parmesan with any number of gluten free pastas or spaghetti squash.  The Francesco Rinaldi Pasta Sauce is already gluten free so you can pour it all over the chicken and gluten free pasta. This pasta sauce is low carb (less than 100 calories per serving) and you can taste the rich tomatoes and fresh herbs in the sauce.

The chicken is seared on the outside and then baked to create a juicy, tender, mouthwatering chicken dish that the whole family will love. My husband devoured the first plate and then asked for more.



Ingredients for gluten free Chicken Parmesan

4-6 Boneless, skinless chicken breasts (fresh or thawed, not frozen) these will be cut in half length-wise

1 1/2 Cups Organic Coconut flour

1 Tablespoon garlic salt

1 to 2 jars of  Francesco Rinaldi Pasta Sauce – Tomato, Garlic and Onion is delicious

1 1/2 Cups of freshly shredded Monterey Jack cheese – you can also use Mozzarella

3 Tablespoons butter – unsalted

2 Tablespoons parmesan cheese

1 1/2 – 2 Cups gluten free pasta or spaghetti squash

Directions to create gluten free Chicken Parmesan

Step 1: Preheat oven to 350 degrees.

Step 2: Prepare the chicken. Wash and trim off any excess fat from the chicken breasts. Cut the breasts length-wise to make smaller pieces of chicken breasts.

Step 3: Bread and fry the chicken. Pour the coconut flour in a wide bowl for breading the chicken. Mix in the garlic salt. Heat a frying pan to a medium high heat and melt the butter in the pan. Use a spatula to spread the butter evenly in the bottom of the pan. Coat the chicken in the coconut flour and add it to the pan to fry the outside of the chicken. You’ll want to brown the breading without completely cooking the chicken. Cook for approximately 3 minutes on each side to sear the chicken and brown the breading.

Step 4: Bake the Chicken Parmesan. Once the breading is browned and the chicken seared, lay the chicken breasts in a baking dish. Do each breast separately making sure to not overlap any meat – if needed, get a second baking dish. Pour the Tomato, Garlic and Onion Francesco Rinaldi Pasta Sauce over the chicken and sprinkle on the parmesan and monterey jack cheeses.

Cover the dishes in foil and bake in oven at 350 for 10-15 minutes. The size of the chicken breast effects the length of cooking time. You can cut open a piece to check for internal doneness and either reduce or increase the cooking time. Use a cooking thermometer to check the internal breast if needed. Once it reaches 165 degrees the breast is fully cooked. If you’d like to brown the cheese, remove the foil from the dish and turn the oven to broil the last three to five minutes of baking.

I paired our gluten free Chicken Parmesan with brown rice pasta, steamed broccoli and extra tablespoonfuls of Tomato, Garlic and Onion Francesco Rinaldi Pasta Sauce. The entire meal was rich, delicious, and satisfying. You’d never guess the entire dish was gluten free!

You can find everything you need to create this Chicken Parmesan dish at Walmart. I found the Tomato, Garlic and Onion Francesco Rinaldi Pasta Sauce on the spaghetti sauce aisle. There are different varieties of Francesco Rinaldi Pasta Sauce including: Garden Combo, Marinara, Sweet and Tasty Tomato, Meat, 3 Cheese, Tomato Basil, Mushroom, Pepper and Onion, and Traditional (Original). Any flavor can be used for this recipe. Your selection of pasta sauce depends upon your personal preferences and taste.
