Here I’m sharing a tasty Flatbread Recipe that’s so easy to make — you can cook with your kids when you make it. It’s crispy on the outside and chewy on the inside, and kids love how easy it is to decorate.
Have your kids ever surprised you? Mine have, especially when it comes to eating. We were grocery shopping the other day and my eldest went on high alert when he saw those cracker sandwiches on the shelves. You know the ones, the cheese crackers with peanut butter in-between. His need for this cheesy peanut butter combo got me thinking… what if we could create a cheese and peanut butter flavored sandwich together?
Peanut Butter and Goldfish® Cracker, Flatbread Sandwich
I look forward to the day my kids can make sandwiches on their own, but for now I enjoy being able to cook with them and taking the opportunity to teach them the basics. I love being able to make meals myself, and I want my boys to have that same confidence in the kitchen. From a desire to foster independence in my boys for creating their own meals, I decided to create this easy Flatbread Recipe and fun kid friendly sandwich. It’s a Peanut Butter and Goldfish® Cracker, Flatbread Sandwich. It’s not a gourmet meal, but it is a kid favorite!
Simple Mealtime Recipe
If you want to get your kids off to a good start in culinary creations, you should try this easy Flatbread Recipe and a fun kid friendly open-faced sandwich. My boys enjoyed this kitchen adventure for two reasons:
My eldest loves the flavors of peanut butter and cheese combined and
My youngest loves Goldfish® crackers – they bring an element of fun to all eating activities.
From my perspective, Goldfish® crackers are the perfect solution for my kids’ snacking and mealtime recipes.
Why Flatbread?
I think flatbread is the perfect bread to use for teaching kids how to make their own sandwiches. My eldest is five and a half and I trust him to add peanut butter to a dish, but flatbread holds up much better than a slice of store bought bread. Especially when little hands are learning how to spread peanut butter onto an edible surface.
Ingredients for an Easy Flatbread Recipe
4 cups all-purpose flour (more for coating the countertop and your hands)
2 cups warm water (110 degrees fahrenheit)
1 envelope yeast (or 2 1/2 teaspoons)
1 teaspoon salt
Butter or spray oil to grease cooking pan
Peanut Butter and Goldfish® Cracker, Flatbread Sandwich Toppings
Smooth Peanut Butter
Goldfish® Cheddar or Goldfish® Whole Grain Cheddar crackers (you can pick up a 30 oz bulk carton for $6.48 on Rollback at Walmart)

Step 1: Gather all ingredients. I like to gather all my ingredients together before I start to make sure I have everything.
Step 2: Mix the dry components . Add the salt to the flour and mix to combine.
Step 3: Add the yeast to the water. It’s best to work with water at 110 degrees. Try heating your water in the microwave in a heat proof bowl on high for one minute. Use a cooking thermometer to check the temperature. Add the yeast to the water while it is warm. Let it sit for 3 minutes or until it starts to foam. Mix the yeast into the water.
Step 4: Add the water and yeast mixture to the large bowl of flour and salt in 1/2 cup increments. Keep adding water until everything is combined. If the dough is too sticky you can add more flour one teaspoon at a time. Keep mixing until a dough ball starts to form. Knead the ball with your hands and once it starts to get smooth, place it back in the bowl and cover it with saran wrap. Let it sit for 2 hours or until the dough doubles in size.
Step 5: Form the dough balls. I recommend parchment paper for rolling out the flatbread patties. Cut a piece of parchment paper about 20 inches long. Flour your work surface (parchment paper) before you start to create the dough balls. The dough will make somewhere between ten and twelve flatbread pieces. You can opt to divide the dough in the beginning or just create dough balls as you go. Any unused dough can be stored in the fridge in an air tight container for about a week.
Grab a fist-sized portion of dough. Coat the dough with flour and shape it into a ball. Place the ball on floured parchment paper and place another piece of parchment paper on top of the dough ball. Flatten the dough ball and use a pastry roller to roll the ball flat like a pancake 1/8″ to 1/4″ thick.
Step 6: Cook the flatbread. Grab a skillet and place it on medium high heat on your stove top. Add a 1/4 inch pat of butter (or spray on some spray oil) to the pan and melt it. You want the surface of the pan to be coated with a thin layer of butter – you can add spray oil if you’re having trouble keeping the butter golden and not brown. Add the flattened dough patty to the pan and fry until both sides are cooked. This will take somewhere between 2-3 minutes per side. Remove the flatbread from the stove top and place on a plate to cool.
For this Peanut Butter and Goldfish® Cracker, Flatbread Sandwich, we simply spread on some smooth peanut butter and the boys added their goldfish crackers on top. Tasty fun for everyone!
A Flatbread Masterpiece
Voila! You have flatbread. You can layer it with loads of toppings like peanut butter, almond butter, hazelnut spread or any myriad of other tasty spreads. You can layer it with other flatbreads or roll it with cream cheese, ham and spinach.
It takes a little time to make flatbread (since you have to wait for the dough to rise) but it’s well worth the wait as it tastes better than anything you can buy in the store and it’s fresher too.
