Guest blogger and Hail Merry Fan of the Week, Morganna Hayes @808paleogirl, shares this gluten-free and Paleo Holiday Spice Muffin made with Hail Merry Caramel Sea Salt Macaroons.Thanks Morganna!

 

 

Holiday Spice Muffins:

 

Ingredients:

2 cups almond meal

1 cup sunflower seed butter

2 eggs

4 Hail Merry Salted Caramel Macaroons (At room temp)

1/2 cup pure maple syrup

1/2 cup chopped dates

1 teaspoon cinnamon

1 teaspoon cloves

1 teaspoon nutmeg

1 teaspoon ginger

1/2 teaspoon baking soda

 

Directions:

In a bowl, combine all ingredients, make sure macaroons are well combined and slightly chunky.

 

Place about 2 tablespoon of batter into each muffin tin and bake at 375 for 15 minutes.

About 808PaleoGirl: Morganna was born and raised on the North Shore of Oahu. She participated in many different sports throughout her life and that eventually lead her to a tennis scholarship all throughout college. From surfing, swim team, competitive paddling, tennis, cross country, track, and tennis, she always put health and fitness at the forefront of her mind. She recently graduated from Notre Dame de NaMur University in May of 2013 with her Bachelors Degree in Kinesiology and an associate’s degree in Business Administration. She is also currently writing a paleo cookbook and is running a blog revolved around her Paleo adventure and her crossfit progress. Morganna discovered she had developed celiac disease by the time she was 13 and went vegan/ gluten free/ raw, etc. for about 6 years until she finally discovered Paleo as her number 1 way to eat.  Now her passion is to help others learn the value of clean eating and exercise and how those aspects can greatly impact life, athletic performance, and mental health.
