Healthy eating doesn't mean missing out on your favourite foods, it's all about moderation and enjoying what you eat.  Since last year I've been following a more healthier eating plan and the results have really shown.  The biggest change has been making my meals from scratch and not relying on packets or jars.  I now really enjoy cooking and also trying out lots of different cuisines.  I never thought I'd be one of those experimental cooks, but these days I love nothing more than spending a day on the weekend trying out new recipes.  So when I was asked whether I would like to try making a couple of the new healthy recipes from Marks and Spencer, I was up for the challenge.  In January Marks and Spencer launched new products in their fuller for longer and count on us ranges as well as a selection of recipe cards.  All of the recipes are under 400 calories and take between 15 to 25 minutes to prepare.  Now that's what I call tasty fast food!  I chose to cook the Spanish Style Chicken this week and it's certainly something I'll be making again.  Full of flavour and healthy ingredients this dish is a great all round dish.  I served mine with rice but if you prefer you could add new potatoes or a jacket potato.  Here's how easy it is to make:

Serves 4

Ready in 25 minutes

Ingredients

2 tbsp olive oil
1 large onion
1 pepper
4 skinless, boneless chicken breasts
2 courgettes
1 tbsp smoked paprika
2 garlic cloves
2 tbsp fresh rosemary
690g jar Rustic Italian Tomato Passata
400g can cannellini beans
Long grain rice (or pasta/ potatoes)

Method

Chop the onion, slice the pepper and cut the chicken into pieces

Thickly slice the courgettes, crush the garlic cloves and finely chop the rosemary

Drain and rinse the cannellini beans

Heat the oil in a large non-stick frying pan or wok. Add the onion, pepper and chicken and stir-fry for 3-4 minutes until chicken is lightly coloured

Add the courgettes, paprika, garlic and rosemary then stir fry for 1-2 minutes

Add the tomato passata and cannellini beans. Simmer gently, stirring occasionally, for 5-8 minutes or until the chicken is tender and the sauce has thickened slightly. Season to taste

Serve with rice, pasta or potatoes

This is a quick and tasty lunch or dinner perfect for sharing.  Next I'll be trying the Fish Provencal.
