30 Minute Beef Vegetable Soup

Recipe type: Dinner

Serves: 6-8 servings

Ingredients

1 small onion, chopped

1 lb ground beef

1 can (14.5 ounces) diced tomatoes

2 cans (8 ounces) tomato sauce

1 cup water

3 teaspoons beef bouillon ( or enough bouillon for 3 cups)

2 cups chopped cabbage

1 Libby’s® Mixed Vegetable pouch

1 Libby’s® green bean pouch

1 teaspoon oregano

1 teaspoon basil

½ teaspoon salt or to taste

Instructions

Heat olive oil in a Dutch oven over medium heat. Add chopped onion and ground beef in pot. Heat until cooked through, about 8 minutes.

Add diced tomatoes, tomato sauce, water, beef bouillon. Bring to a boil over high heat.

Stir in cabbage, Libby's mixed
vegetables
and Libby's green beans. Place the lid on the pot cook for approximately 5 minutes until cabbage is cooked through. Serve immediately and enjoy.
