LCHF Cauliflower rice keto recipe

So I decided to create this blog after the amazing dinner I made myself tonight.

I wanted to record my recipes and log any other culinary discoveries I make on my low carb, high fat / keto journey.

Tonight I made Cauliflower rice kind-of-risotto. It was so much less trouble and effort than real risotto too.

This gave a nice bowl of delicious, hot, low-carb risotto for 120 cal.

So here’s how I made it:

Ingredients:

Around 2 cups of raw cauliflower

125g chopped button mushrooms

Optional dried mushrooms for flavour

Any kind of herbs or seasonings you want. I think I’ll try adding pepper next time.

Approx. 1.5cups of stock.

You can use any kind of stock you want. I used a chicken stock that comes in the form of a little pot of jelly (15cal each) which I made up to 1.5cups with boiling water.

1. Grate the cauliflower right into a pot (or run it thru a meals processor) and add within the mushrooms as neatly. Add in any dried mushrooms or herbs and spices now.

2. Pour for your inventory and stir to combine.

three. Quilt and let simmer on a medium warmth for roughly quarter-hour or unless the veg has softened. Remeber to test and stir at times.

four. You might be accomplished. You want to high with some recent herbs like recent basil or no matter you need.

Which is it for nowadays. I’ve observed extra folks appear to be beginning keto diets so I am hoping that is of use to somebody. I do know I’ll be making this very frequently any further.
