If you like Mikkeller, I think that they have been pputting Vanilla in some of theirs to get that cice creamy flavour. Also, common grounds by MR is a coffee flavoured - give it a go, if possible, go to Leeds and try and get it on tap, its impressive.

Back on the geeky side, there are many nuances which arise from using various malts. Some interesting reading:

Also, I used some old, out of date roasted grains - they degrade and can taste awful - I recommend ordering fresh, as with all ingredients.

Don't forget also, that the dark grains drop pH, which could go too low in your soft water - some advocate using bicarb, not sure iof this works well, I cocked this up also.
