I’m sharing my quick and easy white chili with chicken recipe with you today because the weather is starting to get a little cold here. I love making meals in the morning so at 5:30 in the afternoon dinner is ready by adding just a salad and some fruit. I love easy meals. This is why I like the slow cooker, or crock pot, as some people call them. I can set the hours and forget my dinner meals. I have to have a slow cooker and a pressure cooker so I can make dinners in a flash, or let them cook several hours while I do other things. I had never heard about white chili until about six or seven years ago when I attended a Halloween party with neighbors. Oh my gosh, I was hooked.

The original recipe had spicy jack cheese which is fabulous, but I don’t always have that in my house, so I had to modify the original recipe. You can also make your own beans and leave out the chicken as well if you are a vegetarian. This would make a great meal after a disaster in our communities, or after an unforeseen emergency as well. We could add more beans, less chicken, no butter or whatever. In my mind, I picture after a disaster making a lot of soups and eating outside with the neighbors on my street. Of course, I would have to add a slice of my homemade bread with it, right?

Easy White Chili

3 cans ( 15 ounces each) of small white beans (not drained)

2 cans (12.5 ounces each) canned chicken (drained) or use some leftover cooked chicken

1/2 cup butter

2 cups chicken broth

1 cup mozzarella cheese (grated)

4 ounce can green chilies (diced)

1/4 cup chopped onion

16-ounce jar of salsa

sour cream to garnish

Tortilla chips crushed for garnish

Instructions:

Add all the ingredients in order into a slow cooker and cook on low 5-6 hours. Serve with crushed tortilla chips on the soup with a dollop of sour cream.

It is so comforting to know you have all the ingredients to make this delicious meal right in your pantry or food storage closet and don’t have to travel to the store. You could also make a batch and put it in the freezer for future entertaining, or a quick meal when you are on the run. Just pull it out, put it in the microwave and you are set.

This is such a great soup to make for a crowd because you can just add another can of beans. Yep, we always have enough to feed anyone who shows up for dinner, that’s how we roll here, enjoy! I highly recommend stocking your pantry with canned beans, canned chicken, and green chilies. Here’s the deal, with these three ingredients we can make so many meals from scratch. Of course, I have to have my cream of chicken soup in the pantry as well.
