Chicken Avocado Salad

 

Serves 4

 

1 large cooked chicken breast, chopped (about 1 cup)

1 pieces of cooked bacon, chopped

1/2 cup cornichon pickles, chopped (dill pickles are good too)

1/4 cup chives, chopped plus a few tablespoons to serve

3 tablespoons mayo

1 avocado, chopped

Lettuce

Pita bread

 

Combine all ingredients except for avocado.  Stir to combine.

Add the avocado and gently fold the avocado into the mixture.

Place a few lettuce leaves into the pita bread then a few spoonfuls of the chicken salad.

 

Chicken Salad is a comfort food from my childhood.  It’s an old fashioned east coast thing that you don’t see in LA very often.  If I want to eat it then I have to make it!  I’ve created my own version of chicken salad sandwiches with pita bread and avocado.
