When you have a get together or a family dinner, you can serve this dessert that melts in your mouth. You can prepare a separate batch for the kids by replacing the rum with coconut milk. The slightly crisp exterior and taste of the caramel would make it an instant hit and a perfect ending for a dinner.



Ingredients:

Unsalted butter – 8 tbsp

Very ripe bananas – 3 (1/3 inch round slices)

Light brown sugar – 8 tbsp

Ground cinnamon – ½ tsp

Dark rum – ½ cup

Chopped walnuts – to garnish

Vanilla ice cream – to serve

Method:

Melt the butter in a skillet and cook the slices of plantain until they are golden color on either side. Now transfer to a plate and keep it covered to maintain it warm.

Now put the sugar and cinnamon to the skillet and stir well until the sugar melts and becomes bubbly. Now add the rum and stir well until the sauce is thick and smooth. Simmer it for 3 or 4 minutes.

Serve the plantain slices in small bowls and drizzle the hot sauce over it.

Sprinkle few walnuts that are toasted and serve along with a dollop of vanilla ice cream on one side.
