South indian mixed vegetable sambar recipe with step by step photos - Sambar is very important part of south indian meal .Sambar is nothing but a hot and spicy lentil soup with mixed vegetables.It is a accompaniment for signature south indian recipes like idli and dosa,medu vada and rice. sambar is known as "Sambaru " in karnataka , "kuzhambu" in Tamilnadu and "sambar" in rest of the indian region.

The recipe i am going to share today is very easy and my mumma's version.Traditional sambar recipe have tamarind or kokum for sourness which i am avoiding it.

I have used mixed vegetables like brinjals, potatoes,carrot,green peas and drumstick here with onion and tomatoes.
I have cook both lentil and vegetable separately. i have also used homemade sambar powder here. if you don't have homemade powder then i suggest to go for Everest sambar masala.

Prep Time :15 min | Cook Time : 10 min | Total Time : 25- 27 mins

Main Ingredient : pigeon peas split | Serves : 3-4 person | Cuisine :South Indian

Ingredients:

Pigeon peas split / toor dal - 1 cup

mix vegetables , chopped - 1.5 cups

refined oil - 2 tbsp

curry patta - 7-8

mustard seeds - 1/2 tsp

cumin seeds - 1/2 tsp

asafoetida - a pinch

sambar powder - 2 tbsp

onion , finely chopped - 1 medium size

tomato , finely chopped - 1 medium size

turmeric powder - 1 tsp

red chili powder - 1tsp

ginger-green chili ,chopped OR grated - 1 tbsp

fresh coriander - to garnish

water - 2 cup

salt to taste

Method/Assembling:

wash your toor dal and pressure cook it separately. mash the dal ,add water and keep it aside.


wash your vegetables and finely chop them. pressure cook them separately. keep it aside.


heat oil in kadai.

add mustard and cumin seeds.when they crackle add asafoetida and curry patta.

Add onions and saute it for a while.

Add boiled vegetables.Add turmeric powder, red chili powder and salt.mix it well.

cook the mixture for 2 mins.

Add boiled dal , tomatoes ,ginger chili to the mixture.

boil whole mixture for 5 to 7 min on high flame.

turn off the flame and add sambar powder and fresh coriander.

cover with lid.

serve hot.
