Paneer Pasanda Recipe with step by step photos- Here comes another paneer delicacy.It has smooth,creamy and mild spicy gravy which makes it unique from other paneer gravy. Paneer pasanda is a rich paneer sadwich recipe cooked and serve along with creamy tomato-onion gravy.Paneer pasanda tastes best with pulao and alu paratha.
I have tasted paneer pasanda once in restaurant and since then i wanted to try.Paneer pasanda is not for your everyday cooking. It is a delicate recipe requires time.
I have specially prepare homemade paneer to make this recipe and i have already shared recipe here.
The version i am going to share today is restaurant style.Paneer is stuffed with some green paste originally but i have used red tomato base paste here.
If you run out of time, You can directly shallow fry paneer slices without stuffing.Or you can even make paneer tikki.
The gravy is quite simple and easy to make and it has very delicate flavor of cardamom and cinnamon.
This paneer pasanda goes best with jeera rice, dal and paratha.

Recipe paneer pasanda-how to make paneer pasanda restaurant style

Ingredients for paneer sandwiches:
paneer (cottage cheese) - 250 gms
tomato,grated or finely chopped - 1 small
crumbled or grated paneer,-2 tbsp can substitute grated cheese instead of paneer
raisins (kishmish),chopped - 1 tbsp
cashews (kaju),finely chopped -6-8 or 2 tablespoon finely chopped cashews
green chilies, chopped-1 tbsp
coriander leaves (dhania patta),chopped - 1 tbsp
mint leaves (pudina),chopped - 1/2 tsbp [optional]
red chili powder-1/4 tsp
cumin powder (jeera powder)- 1/2 tsp
Salt to taste
oil for frying
Ingredients for corn starch paste:
corn starch- 1/2 cup
water-4 tbsp
Ingredients pasanda gravy:
onion-tomato paste:
onions, roughly chopped - 2 medium to large
oil - 2 tbsp
Garlic cloves - 5-6 nos
Ginger,roughly chopped - 1 tbsp
green chili - 1 nos
tomatoes, roughly chopped - 2 medium to lage
cashews(kaju) - 10 to 12
cinnamon (dalchini) - 1/2 inch
green cardamoms (chotti elachi) - 2 nos
cloves (lavang) - 2 nos
for cooking the gravy or sauce:
fried oil or fresh oil-1 to 1.5 tbsp
caraway seeds (shahjeera) - 1/2 tsp [substitute cumin (jeera) if shahjeera is not there]
tej patta (indian bay leaf)-1 nos
turmeric powder (haldi) - 1/4 tsp
kashmiri red chili powder or deghi mirch - 1/2 tsp
coriander powder (dhania powder) - 1/2 tsp
garam masala- 1/4 tsp
sugar - 1/4 tsp
kasuri methi (dry fenugreek leaves) ,crushed - 1 tsp
1 cup water
low fat cream- 2 tbsp
chopped coriander leaves for garnish (dhania patta)
salt to taste
Method for preparing tomato-onion paste:
Heat kadai.Add cardamom(cardamom pods), cinnamon,cloves and onion.Saute it until brown.Add garlic,ginger and green chili.saute it.
Now, Add tomatoes and cashews.Cover kadai with lid and cook the mixture for 2-3 mins on medium flame.
Cook the mixture very well.
keep the mixture aside and let it cool down.
Make a fine paste and keep it aside.
Method for paneer sandwich:
take a mixing bowl and mix all the ingredients expect paneer slices.
slice your paneer into triangle.
slice each paneer into two halves gently.
stuff paneer triangles with stuffing.
heat oil in nonstick pan shallow fry paneer slices.
keep the slices aside.
Method for gravy/assembling:
Heat Oil in kadai.bay leaf and cumin.
When seeds crackle,add onion tomato paste.
Cook the paste until it reduces oil from sides.
Add salt,red chili powder,cumin powder and mix well.
Add cream and mix well.
Add sugar,kasuri methi.
Add paneer slices and gently mix .
garnish with coriander.
Serve hot.
Note:
skip cream if you do not have it.
for a vegan option substitute paneer with tofu and skip the cream. you can also use coconut cream instead.
