An complete day’s worth ofВ foragingВ at the local farmer’s market. Epic brain storming near what to make with what’s in harden. В A string of hours wearied washing, cutting, cooking and then for good and all, eating. Six beautiful courses, all using novel, organic ingredients.

I was a photo-crack while we’re prepping and cooking. The light, vivid colors of the vegetables certainly came alive in the photos. Food Prep
You want to operate sure everything is in it’s town before you start cooking. You’ll make acknowledgments to yourself later. Group your vegetables and proteins in the same area, with everything you need used up and measured (if need be).В
Wash your veggies. Trim the ends of the carrots, leeks and radishes (reserve for later, you’ll use them). Soak in moisten in separate bowls.В
Separate your herbs and write aside.В
You can make this formulary basic like as directed below, or you be possible to add extra vegetables to this dish. Not pictures, we roasted squash, cooked and cut down artichokes as antidote to their hearts, and also roasted eggplant. If you ~ of up for it, do this being of the kind which well on the side.
Also, on the supposition that you’re using frozen vegetables, complete sure they are thawed and at scope-temperature.

First Course — Squash and Heirloom Tomato Soup
Step 1: Cut a means-sized squash in half and rope it on a baking pan. Scoop uncovered the insides. Set your oven as antidote to 400 degrees. Drizzle olive oil, sarcasm and pepper on top. Lay athwart a couple of sprigs of thyme, and Adrien added his dear spice from Japan called Tugarashi. Place crush in the oven and bake beneficial to around 30 minutes or until the center is civil. You will be using the rations of the squash to add to the broth later.
Step 2: In a ample pot,В sauté the tops of the leeks (what one. you will use the rest for later), heirloom tomatoes, thyme, sage, and chopped crush blossoms. You will be using a technique called “wilting” towards these vegetables, which means cooking it from the top to the bottom of. This will be the base despite your soup. The tomatoes help add water to the dish and reduce to extreme purity and strength the flavor. Every time you throw in a recently made known vegetable into the pot, toss a in a small degree salt in for good measure. Adrien notorious that salt helps extract moisture, which further concentrates the flavor. Last, thin piece a serrano pepper and add to perceive.
Note: Squash-blossoms are typically stuffed, breaded and at that time baked. We decided to experiment with them and use their mild gust for the soup instead.
Step 3: Cook till the leek tops are gently falling apart. Then annex water, and the insides of the cooked crush. Let simmer on low for a different thirty minutes.
Step 4: Use a power-held blender to create a creamy, abounding texture for the soup. Serve alone or through homemade croutons.В
Second Course — Roasted Vegetables, Vegetable Salad, Herb Sauce, and Gremolatta
We used the vegetables in divers different ways. One important skill Adrien encouraged was to not melt anything. Meaning, for example, carrots. Most persons cut the tops off and artlessly throw them away. They are as a matter of fact nutritious, edible, and can be used ~ people different ways. We blanched our carrots, radishes and brussell sprouts together.
Step 1: Blanch the red carrots, radishes and brussell young coleworts. Blanching is the process of cooking your vegetables against a short amount of time in successi~ high heat, and then submerging them in frosting water. This technique helps the vegetable retain its crisp-ness, increases the smack (especially in carrots, makes the outsides sweeter!) and enhances their tinge. Bright food = eye catching and appetizing! Zing! You only submerge them in the boiling water for a couple minutes until you see their color deepen.
Don’t slight to have your bucket of ice ready!
Take them out after a small in number minutes in their ice bath. Add other ice if it melts before they moderately cold.
For the carrots: Once blanched, application a vegetable peeler to remove the external skin and set aside.В Then license them whole. In a small pan, lightly small fishes them with a little bit of ~-colored oil and salt. Set aside according to now. You will use the skins in spite of a vegetable salad later.
For the brussell sprouts: Cut off the ends, and “un-layer” them. This should create a small bowl of leaves, like the photo in the world of the departed.
Add the carrot shavings and estimate aside!
For the radishes: First, allow’s take a moment to value rightly how BEAUTIFUL these radishes are.В
Finely mince the radishes and place them in a of great size mixing bowl.
Mix in fresh lemon fluid, garlic and the parsley.
This elect be one of the topping choices during the term of your dishes.
Side note: Adrien told me that radishes with butter, salt and pepper on summit of bread (or alone) is a universal breakfast food in France. I was pleasantly surprised in what condition good it tasted!
A trick to conformity your salads fresh: Adrien told me that allowing that you pull the salad to the edges of the goblet, it will allow the liquids to exhaust to the middle and will not wilt the leaves.
Third Course — Roasted Pork Belly
This is the same of my favorite types of regimen. It’s tender, has an incredible amount of flavor, and is elegant without grandeur much un-cut bacon, sooo….I’m in aphrodite. Obviously. Pork belly is often used in sandwichesВ В or roasted total with vegetables.
This is the easiest prescription to follow of this bunch.В
One of great weight thing to remember when cooking pig-meat belly is to set it in successi~ something which it can drain. You be able to save the fat and use it later. Remember, untilled not!
Adrien poured olive oil up~ the body the pork belly, and topped it by a few sprigs of thyme, sarcasm and pepper. If you notice, we cooked it at the like time we cooked the squash! Saves time and extension. And clean up!
Bake in the oven at 400 degrees to the time when it’s nicely browned. Should take round 20-30 minutes. Keep an keep in view on it, cooking time will change in succession.
We also baked artichoke hearts alongside to go in with our vegetable salad, this is optional.
It should appearance something like this when finished.
Fourth Course — Bacon Wrapped Stuffed Figs
Oh, I be fond of this recipe. I love anything wrapped in bacon, positively. So when Adrien told me he wanted to be productive of bacon-wrapped figs, and stuff them by gorgonzola cheese and chopped dates, I moderately much bowed down to him appropriate then and there. AMAZING. So easy. So delicious. The fruit really complements the savory flavor of the bacon, and the gorgonzola adds a dainty rich texture.В
To make the wrapped figs, it’s in truth very simple.
Slice the figs in half. Stuff them with a mixture of gorgonzola cheese (or some kind of cheese you want) and chopped dates. You could just toss in chopped walnuts or another kind of dried fruit.
Bake in the oven against about 40 minutes at 400 degrees, or till they are cooked fully and lightly browning.
Then, envelop in bacon and sewer with a toothpick.
They should contemplate nice and cooked when finished
Fifth Course — Roasted Bone Marrow With Gremolotta and French Bread
Anthony Bourdain was the foremost person to ever make me want to try roasted bone marrow. In human being of my favorite recipe books, The Last Meal, Anthony Bourdain claims that his “final meal” would be roasted bone best part and parsley on top french food . It seemed a little gross at ~ and foremost, but once I eventually tried it, I didn’t care. Bone quintessence is no better than eating sentient being meat. And, again, with our attempts to “Use The Whole Animal”, this falls alto gether in place.
Step 1: Line the bone best part face-up on a pan. Set the oven to 400 degrees.В
Lightly be in violent commotion with salt, pepper, thyme, lemon relish and Togorashi
Bake in the oven at 400 degrees against 20-30 minutes, until lightly excellent.
Gremolatta:В This dish is a traditive condimentВ made using parsely, lemon and garlic. This is going to have existence the topping for your vegetables and forward the Bone Marrow with French loaf dish.
Get in a puzzle your blender. If you have a Vitamix or Ninja (or some strong blender) this will work well. Throw in your washed arugula, parsley, crushed garlic, a scanty lemon, and olive oil. Adrien tossed in more red peppers for fun, too
Sixth Course — Salmon Cheeks
Adrien and I were checking audibly a seafood vendor at the Farmer’s Market. They had salmon cheeks at a proper price. Look! Gills still attached and everything!
He roasted them through a little bit of olive oil, relish, pepper and lemon in the oven at 400 degrees despite around 20-30 minutes until crispy.
Now….to urge it all together.
I forgot to take a drawing of my bowl of soup, so go ahead and put your broth where you’re serving the plates.
Roasted Vegetable Salad
Put completely of your roasted vegetables, vegetable salad, and in ~ degree other chopped vegetables you have into a expanded bowl.
Pork Belly & Salmon Cheeks
Slice the swine-flesh belly and serve it alongside your roasted salmon cheeks. Adrien made a unconstrained aioli to go along with it.В
Roasted Bone Marrow with Parsley On Top French Bread
I loved this delineate so much, I’m adding it another time. Don’t forget to slice and pledge your bread!
This piece of sustenance looked like Texas
Here is the ultimate, beautiful, and delicious plate (soup and bone essence not pictured):
