Chipotle Chicken Quesadilla with Lime Sour Cream
Serves 8-10
Ingredients
1 red pepper, finely chopped
1 large chicken breast, grilled and chopped (about 1 ½ cups)
1 bunch cilantro, finely chopped (about 1 cup)
1 large red onion, finely chopped
3 C. grated mozzarella
1 can chipotle peppers in adobo sauce
10 9-inch flour tortillas (sun-dried tomato and/or spinach)
8 oz. sour cream
zest of one lime
1 Tbsp. lime juice
1 tsp. salt
Preparation
In a large bowl, mix the red peppers, chicken, cilantro, red onion and mozzarella together.
Mix in about 3 tsp. or more, depending on how spicy you want it, of the adobo sauce from the canned chipotle.
To make Quesadillas, preheat the IMUSA Quesadilla Maker and wait for the head indicator light to turn indicating it is ready to cook.
Place 1 tortilla on the lower cooking surface.
Evenly distribute the red peppers, chicken, cilantro, red onion and mozzarella mixture.
Top with second tortilla.
Close the lid and cook for 2-5 minutes, depending on desired crispness and thickness of fillings.
Open lid with a potholder or oven mitt. Remove with wooden or plastic utensil. Cut into triangles; serve with salsa and avocado slices.
Serve with lime sour cream. For sour cream: Mix the remaining ingredients together and serve in a small bowl.
