Words of Wisdom from David and Bill

Incredibly wise words and always difficult to hear for those who are young, starting their careers and are inherently people pleasers.  You can NEVER make everyone happy; self respect and sticking to your values is the key to whatever you wish to be successful in.

I thought I would look into some more quotes from Bill Cosby, and am sharing a few below:

What a beautifully set up picture.  Honestly, David, you could do a cooking show.  Very aesthetically pleasing!  Eggs, olives, raisins, onions, beef and looks like fresh dough (the rolling pin is the give-away).

And Maureen provided a recipe!  Yup, looks like it includes the items in the picture.

I am soooo impressed David made the dough (or at least rolled it out)!

If anyone wants to take a crack at replicating this, let us know!

Chilean Empanadas – Empanadas de Pino

Preparation: 

Prepare empanada dough and chill.

Cook the onions and garlic in the vegetable oil and butter until softened. Add the ground beef, cumin, chile powder, paprika, beef bouillon, and salt and pepper to taste.

Cook the beef, stirring and crumbling the meat, until browned. Add the flour and continue to cook for 5 or 10 minutes more.

Remove the meat mixture and let cool. The beef mixture will keep up to 2 days in the refrigerator.

Shape the empanadas: Separate the dough into golf ball size pieces, and roll into smooth balls. Let rest for 5 minutes. On a floured surface, roll each ball of dough into a 6 inch diameter circle, about 1/4 inch thick. Add 1 tablespoon of the beef filling, a few raisins and some chopped olives, and a slice of hard boiled egg to the middle of the circle.

Brush the edges with water and fold the pastry in half over the filling, to make a semi-circle.

Seal the edges by pressing down with your fingers. Brush the sealed edge lightly with water, then turn the edge toward the middle and press with your fingers to seal.

Mix the egg yolk with 2 tablespoons milk, and brush the empanadas with the mixture.

Bake at 350 for 25-30 minutes, or until golden brown.

For those of you asking, some of our friends who are of the LDS faith explained:

 Family Home Evening (FHE) or Family Night, in the context of The Church of Jesus Christ of Latter-day Saints (LDS Church), refers to one evening per week, usually Monday, that families are encouraged to spend together in study, prayer and other activities. According to the LDS Church, the purpose of FHE is to help families strengthen bonds of love with each other as well as provide an atmosphere where parents can teach their children principles of the gospel.

What Worked, and What Didn’t Work on Idol this Year

It’s Finale Week on Idol this week.  I have watched the show over the past months, and although I refrain from making comparisons, between you and me, there is still no one who has made on impact like that special performer on Season 7   Nonetheless, I still have tuned in and loved the commentary by Fred Bronson, Brian Mansfield, Melinda Doolittle, MJ and others ~ sometimes more than show itself!

One of my favourite Idol bloggers is Mark Franklin, and he recently wrote a great article on some areas that Idol did not get right this past year and needs to improve in Season 14.  I have to agree with alot of what he said and thought I would share it in it’s entirety here:

Here are a few points that rung especially true to me:

2. The mentor: Randy Jackson? Really? After 12 years of hearing him spout the same old lines from the judges’ table, Idol thought he’d be able to offer some valuable insight to the contestants. If so, we didn’t hear it. What did we hear? Randy’s advice to M.K. Nobilette before one of her performances: “You gotta give it your all and give your best performance.” Ah, really?

A highlight this year was David Cook at mentor.  He had awesome advice.  Right on the money.  He needs to come back.  Seriously.

3. The unfairest cut of all: American Idol made a big deal out of advancing 30 singers to the semifinals. Then it cut 10 singers without ever letting them perform for the public’s vote. It smacked of one of the most unfair moves the show has ever made. The gals cut before they could sing were Kenzie Hall, Austin Wolfe, Jillian Jensen, Brandy Neelly and Andrina Brogden; the guys were Briston Maroney, Casey Thrasher, Ethan Harris, Jordan Brisbane and Maurice Townsend. Hopefully, we’ll see them excel on a future season of The Voice.

There was one more thing early in the season that make me think the show had lost even more of its heart: the bus full of contestants who had to figure out their destination, figuratively and literally:  the comfy hotel which meant they were safe, or the Departures Level of the airport which meant it was time for home, really was a cruel way to make the cut.  While many watchers loved this, I heard a collective cry of cowardice among others.

I agree about the deep cut from 30 to  20 without any airtime for those cut. Also not nice.   I wanted to hear more of Austin.

4. Featuring who?: As the finals began, Idol began featuring upcoming new artists on its results shows. Like Jake Bugg, Koadline, Mali Music and Royal Teeth. Huh? What sense did that make? Especially since its own alumni — like Elise Testone — had released or were preparing to release new material that deserved and was worthy of Idol’s promotion.

Totally agree!  I love new acts as much as anyone, but would love part of the show dedicated to Alumni!  Idol has already invested so much in them, and an appearance can boost iTunes sales ten fold!  Take care of your own family first, Idol. Bring back the Archuleta!
