Class is back in session!

After a little Teacher’s Break last week for the July 4th Holiday, we have

our red pens ready to go to start grading some Home{work} Assignments.

 

Do you have a home-related project to share?

Will it “Make the Grade?”  

 

Before we get started, and before I share the Top 3 Most Viewed Posts

from the last Home{work} Wednesday Party, I need to share something

with you.  I am very excited that I was chosen to introduce a newer

magazine that you may have seen in your local grocery store.

 



I found my copy at my local Food Lion grocery store.

This issue features over $30 of fabulous coupons.

Some of the articles that I loved are:

Over 120 pages packed full of great articles about Home, Family, Health

and so many fabulous recipes my foodie-mind was reeling!

 

I love the subtitle of this magazine…

Enjoy Life for Less!

 

Isn’t that what we are all seeking?  All You Magazine offers some great

ideas and solution to live by their motto.

 

Speaking of “less”… some of the recipes inspired me to create my

own version of a healthy and inexpensive dinner.

 

I say “less” as in less calories, less fat, and less gluten.  In fact, no gluten.

And most important…because the temps are so hot the chickens are laying

are laying boiled eggs… I thought a recipe that required very little cooking

was called for.  It’s one of my FAVE Summer time go-to side dishes.

And with some fresh grilled shrimp….its a Meal!

 

 

Thai-Basil Cucumber “Spaghetti” with

Grilled Sesame Shrimp

 

Now I hear what you’re already saying… how can this recipe be

GLUTEN FREE if it’s spaghetti?

If you look closer, the “spaghetti” is actually thinly sliced cucumber. 

 

I gathered all the ingredients from my local Food Lion…

The prep to make the spaghetti “noodles” is super easy.

You simply slice cucumber slices very thinly, then cut them into

small strips or “noodles.”

 

Here is my cutting board of freshly chopped and diced veggies for

the “spaghetti.”

Above you can see the thin cucumber “noodles.”

The spaghetti “sauce” is easy to assemble and can be done so in about 5

minutes or less.  Some of the sauce can be used for a great marinade for the

shrimp, so I would suggest making that first so the shrimp can soak in the

flavors of the sauce while you are prepping your veggies.

 

I like to store any excess sauce in the fridge as a marinade for pork or for

a great salad dressing.  I love the versatility.

 

Did I mention there is hardly any cooking involved?  

 

Yea, I thought you would like that part.

Thai-Basil Cucumber "Spaghetti" with Grilled Sesame Shrimp

Serves 4

A delicious and nutritious take on a pasta dish using this strips of cucumber as "noodles." Basil, garlic, fish sauce, sesame oil and fresh veggies create a wonderful "spaghetti" sauce." It is topped off with fresh grilled sesame shrimp.

For the Sauce

3/4 Cup Oil (veggie, canola or coconut)

1/4 Cup Rice Wine Vinegar

2 Tsp Fish Sauce

1/4 Cup Reduced-Sodium Soy Sauce

1 Tbs Gourmet Garden Minced Fresh Garlic,

1 Tbs Gourmet Garden Minced Fresh Basil

1 Tbs Gourmet Garden Minced Fresh Ginger

1/4 tsp fresh pepper

Grated peel of one lemon

(opt) pinch of Red Pepper Flakes if you desire some heat

For the "Spaghetti"

4-5 large cucumbers, peeled, sliced longwise into strips, and cut into smaller strips for "noodles"

1 Small Yellow Pepper, cut into small cubes

1 Cup Cherry Tomatoes, quartered

1 bunch Green Onions, chopped

1 cup Carrot Strips, cut into smaller pieces

1 bunch Thai Basil or Cilantro, finely chopped

(opt) 1/2 cup grated radish

Shrimp

About 1 pound, frozen/thawed or fresh, peeled with tail on

For the Sauce

Combine all ingredients in a small bowl. Wisk well. Pour about 1/2 cup of sauce into another bowl for shrimp marinade. Set remaining sauce aside.

For the Shrimp

Pour 1/2 Cup Sauce over peeled shrimp, allow to marinade while you are preparing your vegetables. Add a bit more of the reserved sauce if needed, to make sure all shrimp are thoroughly covered.

For the "Spaghetti"

Cut all veggies, as directed above. Place in a large bowl, toss, set aside until shrimp are done.

Remove shrimp from marinade and grill until done. Place on a platter and sprinkle generously with sesame seeds.

Pour reserved sauce over veggie "spaghetti" mix and toss well. Place Veggie Spaghetti on a large platter, and top with grilled shrimp. Sprinkle some fresh chopped basil or cilantro on top.

Notes

Tip: Chopped peanuts go really well with this dish, and adds a great crunch. Just sprinkle over the top prior to serving, or set aside in a small dish and allow guests to add them as desired.

* The Sauce may seem very salty, but keep in mind no salt has been added to the fresh veggies.

If you are concerned about sodium intake, you may want to substitute some clam juice.
