Today we teach a bit about cocktail balance and how to best balance your cocktails so they don’t come out super sour or over-sweetened. Creating a cocktail from scratch can seem intimidating but what you quickly find are patterns that make up many of the worlds best cocktails.

And for those that don’t fit that pattern? Probably started with a well established cocktail that did have some pattern ratios. In this video we focus mostly on sweet v.s. sour but do touch on some of the bittering components and what salt can do to suppress some of that better.

What that means is, we pulled out a popular 2:1:1 ratio of alcohol to sweet to sour but then we twisted it a bit to avoid creating a classic daiquiri design.

In this balanced test, we add a slight bit of Fernet-Branca and a bit of salt to suppress some of the bitter component and allow the eucalyptus to shine in subtle notes.

What we did was take the 2:1:1 and slightly modify it a bit without tossing the ratio out the window allowing us to create a more unique drink that still can utilize lime, sugar and rum. We bring some “tiki” with the use of orgeat as our sweet, we use lime as the sour and Hamilton 86 demerara rum as our alcohol (you can use whatever non-blackstrap you happen to have on hand, maybe even a spiced rum like Kraken).
