Nothing is better in the summer than biting into a tart, sweet and juicy pineapple! Our friend, Melissa from Melissa’ Southern Style Kitchen is here to show us how to turn our favorite fresh yummy fruit into a delicious pineapple crisp that will make you the hit of any summer BBQ or potluck!

Hi, I’m Melissa from Melissa’s Southern Style Kitchen! When it comes to Summer desserts, there’s something magical about the combination of pineapple and coconut. It seems as if one luscious bite takes you away. Add toasted nuts, a drizzle of caramel sauce and a generous scoop of vanilla ice cream and dessert turns into a bonefide vacation.

Featuring fresh pineapple in the form of a warm crisp is unexpected and each time I serve this decadent dessert I get the same satisfying response. It’s over-the-top in dessert goodness and super simple to prepare.

Pineapple crisp:

Ingredients you’ll need:

Filling:

4 cup fresh pineapple chunks

1 medium lemon, juiced

3 Tbsp brown sugar

2 Tbsp all-purpose flour

1/4 tsp ground ginger

Topping:

1/2 cup all-purpose flour

1/4 cup quick cooking oats

1/4 cup brown sugar, packed

1/4 cup granulated sugar

6 Tbsp cold butter

1/2 cup sweetened flaked coconut

1/4 cup almond slices or chopped macadamia nuts

caramel ice cream topping, warmed

vanilla ice cream

Yield: 8 servings

Directions:

Preheat the oven to 350°F and spritz a 3 quart casserole with cooking spray. Toss the fresh pineapple chunks with the juice of one lemon, 3 Tbsp brown sugar, 2 Tbsp all-purpose flour and 1/4 tsp ground ginger. Pour into the dish.



Sift together the all-purpose flour, quick cooking oats, brown sugar and granulated sugar for the topping. Cube the butter, and cut into the dry ingredients until it resembles coarse crumbs. Mix-in the sweetened coconut and nuts by hand.



Sprinkle on top of the pineapple. Bake for 30 minutes or until the topping is golden and the edge is bubbly. Serve with a drizzle of warm caramel sauce and a scoop of vanilla ice cream.
