Easy Healthy Eating Sweet Potato Harvest

This easy healthy eating sweet potato harvest recipe is one of my favorites because despite my love for cheesecakes, brownies, and cookies, I am really trying to help my family eat healthier.

We challenged our kids to not eat sugar from now until the end of the year, with the exception of Christmas Eve and Christmas when we have traditional treats. My youngest, who is a huge treat lover, asked if we could go shopping for some healthy “treats”. So I said yes, and we headed off to Sam’s Club to stock up on some good-for-us stuff. He chose oranges and mandarins, and I chose sweet potatoes and sweet mini peppers. Both sweet without the sugar!

I love sweet potatoes, but after trying Paleo and Whole 30 with my sisters I can honestly say I was running out of ways to make them and keep them interesting and appealing!

While looking for inspiration I opened Sam’s Club Healthy Living Made Simple Magazine. It is an app that is available on iPhones and iPads, and found this great articles called A Healthier Twist on Holiday Eating. It talks about ways you can happily substitute some of your favorite holiday menu items for a healthier option to help you avoid that holiday weight gain. So, for example, try a baked potato instead of mashed for less than half the calories.

Anyway, I loved the article, and love the app, which you can download here, so I made the Sweet Potato Harvest recipe  from the app, and changed it just a bit to add some of my favorite things, and some additional flavors, but keep it healthy, easy, and delicious!

Easy Healthy Eating Sweet Potato Harvest

Ingredients

2 medium-sized sweet potatoes, cubed

½ cup pecans, shelled halves

1 Tbs orange zest

1 small yellow onion, chopped

4 tablespoons melted butter (If Paleo, substitute coconut oil)

½ cup zesty Italian dressing

1 Tbs hot sauce (more if desired)

Salt and pepper to taste

3-5 sweet mini peppers, chopped

Instructions

Preheat oven to 350 degrees.

Mix all ingredients together in a 9 x 13-inch greased casserole pan.

Bake covered for 1 hour.

Remove top and stir.

Bake an additional 15 minutes, or until tender and browned.

Notes

You can also cook this recipe on top of stove in a skillet, if pressed for time.

The black pepper, orange zest, and pecans add some additional flavor, and keep it Paleo approved. This makes this dish a great one for sticking with New Year’s Resolutions and healthy eating!
