Blueberry Chipotle BBQ Glazed Pork Tenderloin

Blueberry Chipotle BBQ glazed pork tenderloin, grilled to perfection, and served al fresco for a perfect summer night meal.



There is just something about eating outdoors in the summer that makes my pulse speed up a little and a smile come to my lips. I love it. We are super lucky because we have two big beautiful trees that shade almost our entire back yard. And this means even on the hottest summer days and nights, our yard is still bearable.

As a mom this is like magic because it means I can still send my kids outdoors to get them out from underfoot. But in addition, it makes enjoying our evening meal out on the patio the ideal way to spend family time.



In the summer months we grill a lot, and I love including summery flavors like fresh berries into the recipes. But I also love to add some heat, some spice, and a twist on traditional flavors to get something really unique!

Today I am sharing my Blueberry Chipotle BBQ glaze recipe, which features El Yucateco Chipotle Hot Sauce and fresh blueberries! This Hot Sauce, made by Lowes Foods, uses naturally smoked chipotle peppers, and has a rich consistency and flavor, which makes it ideal for this glaze! You get that smokey heat, but it doesn’t sear the mouth, so even my kids love this awesome flavor.



Of course, I love all the El Yucateco hot sauces, and keep the El Yucateco Green Hot Sauce and El Yucateco Red Hot Sauce on hand for spicing up foods, and enhancing sauce recipes! They have less vinegar than most hot sauces so you get more of those authentic pepper flavors. You can definitely find me dousing fresh grilled corn on the cob with these hot sauces! Yummy!

Anyway, back to the glaze: The blueberries are so fresh and summery I just love adding them to this recipe, but any berry would work. We have a gorgeous blackberry bush, so as soon as they are ripe, I will definitely be using them in this recipe along with the El Yucateco Chipotle Hot Sauce  to add more flavor and excitement to my summer recipes.

The key with this glaze is to only add it to the pork in the last few minutes of cooking. You don’t want to burn it. I know I have mentioned this before, but sugars tend to burn after 350 degrees, and as most gas grills heat to about 400 degrees or higher on the grate, adding your BBQ sauces with tomatoes or fruits while cooking will not result in those yummy caramelized flavors you want, but rather charred and burned flavors.

So cook your meat to almost done, use an instant read thermometer, and when you reach nearly the desired temperature, add your glaze, and then cook for just another minute or so per side.

You can then add additional glaze after removing from the grill. Also, let the pork tenderloin rest for 3-5 minutes before slicing. This will allow it to retain its juices and give you a moist, flavorful meal!

Blueberry Chipotle BBQ Glazed Pork Tenderloin

Ingredients

Blueberry Chipotle BBQ Sauce

4 Tbs Butter

2 Cups frozen or fresh blueberries

1 cup Ketchup

1 Tbs Apple Cider Vinegar

2 Tbs Brown Sugar

⅓ cup El Yucateco Chipotle Hot Sacue

Pork Tenderloin

2-3 lb pork tenderloin

1 Tbs Kosher salt

Instructions

Blueberry Chipotle BBQ Sauce

Put everything in a heavy saucepan, and bring to a boil

Stir well, turn down and let simmer 5-10 minutes

Pour contents into a blender or food processor and blend or process until smooth

Store in airtight container for up to a week.

Pork Tenderloin

Take tenderloin out of the fridge 30 minutes prior to grilling

Preheat grill to about 400 degrees

Salt tenderloin liberally on all sides, and lay on hot grill

Close grill lid and grill 8-10 minutes depending on size

Flip and grill 4-5 more minutes

Brush on Blueberry Chipotle BBQ sauce and cook an additional minute or until an instant read meat thermometer inserted in the center reads 145-150 degrees

Remove from grill, brush on more sauce, let rest 3-5 minutes and serve
