I’m so sorry for my little delay but here I am with October’s Round-Up of Roasting Recipes!. Please do get yourselves comfy, grab a cuppa (or a glass) and feast your eyes on this tasty little lot. And if you haven’t already done so why not drop by and make a comment on any of the entries that catch your eye or grab your fancy!
This month’s guest host is the ever-so-lovely Karen from one of my very favourite blogs Lavender and Lovage. Please do read through to see which of these lovely entries Karen’s selected to enter our Winner’s gallery.
Hot off the mark our first Roasting entry came from Tina at The Spicy Pear, with a wonderfully warming Roasted Butternut Squash Soup gloriously flavoured with a whole bulb of garlic no less, thyme, nutmeg, chilli and balsamic. Heaven in a bowl most definitely. And a beautiful bowl at that!
Well Worn Whisk made her debut into the addictive world of bloggie challenges with a fabulous dish of punchily flavoured Maple & Dijon Roasted Roots with Puy Lentils & Feta. Now what a dish to start with Rachel, please bring them on if this is a taste of what’s in the offing!
Next up came an Eat Your Veg entry from myself with my Roast Butternut, Onion & Sage Tart, made with caramelised roasted butternut squash, sweetly cooked onions, Parmesan and plenty of fresh sage. A great veggie option or if like us you don’t eat too much meat.
The Taste Space linked up her highly successful recipe re-creation for Tamarind Roasted Eggplant and Chickpeas, which sounds like a zingy, healthy and exceptionally tasty bowl of vegan loveliness to me
Feeria’s Cookery Journal next brought an intriguing Chestnut Velouté with Crispy Bacon. I’ve never thought of making a soup with chestnuts but what a cracking idea it is, especially with the luxurious topping of bacon nibblets. How very lovely, and a recipe stored in my memory banks for christmas!.
Caroline Makes roasted some sticky and lip-smackingly good looking Barbecue Pork Ribs and served to remind us that ribs shouldn’t just be side lined for barbie weather but could just as easily (and possibly better) be oven roasted.
A feast fit for any King was cooked and served by Elizabeth’s Kitchen Diary at her Canadian Thanksgiving party. A truly spectacular and mouth-watering menu which you really must go see and read to believe! Trust me. You’ll be drooling. And wanted to peg it up to the Shetlands for the leftovers. And as for the gin cocktails, well wow, what a way to end a party!
It was then back to myself at Eat Your Veg for my Roasted Roots Soup, a dairy-free yet rich, creamy and decadent soup of various oven-roasted roots. My kids just can’t get enough of it, and it’s been requested for tea again tonight. Seeing as I’ve just taken delivery of this week’s veg box they may just been in luck!.
The Gluten Free Alchemist offered us some exceptionally tasty-looking Roasted Aubergines with Quinoa, Pine Nuts & Vegetable Stuffing. Oodles of flavour and pretty darned healthy to boot! Yuuuuum.
The ultimate comfort food nirvana came in the form of Stuffed Swedish Meatballs, from Anneli over at Delicieux of course! What really could be better than a plate of authentic Swedish meatballs other than a whopper giant one stuffed with a heady mix of anchovies and cheese and served with a creamy sauce and a mountain of mash?! I need not say more.
Shabby Chick offered our only roasting breakie recipe with her homemade Autumn Granola with Pumpkin Seeds. And served to remind me to put to good use my ever increasing pot of pumpkin seeds AND finally get it together to make my first ever granola!. Andrea’s recipe looks a truly tasty crunchy munch.
Karen of Lavender and Lovage linked up her Hot Baked Tatties with Haggis recipe. And made me question why I’ve never thought of this heady lunchtime treat of a combination before?!. I do love a spot of haggis, and I’m sure this would be the perfect antidote to a miserable and dank day.
And our final FSF Roasting entry came in soupy form from Jacqueline over at How to be a Gourmand with her Roasted Butternut and Chorizo Soup. A beautifully warming spiced bowl of deliciousness that’ll certainly knock the socks off a windy and wet Autumnal day! Oh yes.
