I can’t say how many times I’ve almost moved to Copenhagen. I still dream of it in fact. Ever since I was little Copenhagen has always been tied to a feeling of freedom and excitement because we went there on special occasions like birthdays, summer holiday and always during christmas time. I still remember the huge adventure it was the first time we were allowed to go only with friends. Yes, living in the very south of Sweden is ah-mazing in so many ways that you’d fall asleep if I started listing them. That said, comparing the overall spirit where I live to that of Copenhagen.. well, where do I begin?! If the south of Sweden would be a SATC-caracter it would be Charlotte, if it was a root vegetable it would be a sweet potato (slightly sexier then a regular potato). If Copenhagen on the other hand was a SATC-caracter it would be Carrie (Rome is Samantha, duh) and if it was a root vegetable it would be a brightly striped, glowing and super cool Chioggia beet. Laugh all you want but it’s true!

So if I ever get sick of the Charlott-y Sweet potato-ness up here in the north I can always go wild and pop over to ‘the continent’ ;).. and by the continent I mean Denmark and by Denmark I mean Copenhagen. Another world just 45 minutes away.

A couple of weeks ago we spent a gorgeous week in Copenhagen, strolling around in the insane heat, finding new places to love, getting blisters on our feet, enjoying old favorites, watching Caspian take his first steps and of course eating a lot. Even though being in a big city can sometimes make me just a tad crazy (hello information/impression/funky enegry-overload) it was just what we needed to let holiday-mode kick in. It was perfect. I wanted to let some of my love for Copnhagen spill over here on Earthsprout so that if you ever go (which you of course ought to) have some really neat places to embrace. As with my recipes, make these tips your own. Set your intentions and let the world lead you to where you need to be.



Tip No1: RENT A BIKE and wear good shoes.

Eats

Morgonstedet Christiania. A gorgeous vegetarian cottage restaurant with delicious and wholesome lunches with various components. I love that you can decide which size of lunch you want. Sit in their garden! Closed Mondays.

Torvehallerne Frederiksborggade 21. A very posh and sort of expensive place but really nice to stroll around and purchase/eye shop food, flowers and food related products. Organic vegetable market between the two buildings! Music and good vibes on summer weekend evenings.

Foodie Amagerbrogade 13 & Jagtvej 133. Tasty and filling takeaway sandwiches on homemade bread to the sound of reggae. Awesome flavors! Ask for vegan and they’ll skip the dairy sauce.

Höst Nørre Farimagsgade 41. Gorgeous high end yet affordable restaurant with a very nordic feel to it. The interiors are stunning too. Close to Torvehallerne

Spisehuset 56 Krudtløbsvej 8. Aside from being absolutely gorgeous, this restaurant offers great food with lots of creativity and heart. The menu is new each week based on the (organic) vegetable delivery and what can I say. They then deliver.

Copenhagen Street Food Christiansholm, On a perfect place overlooking Copenhagen and the canal, food trucks are gathered in a huge building and you can eat away to the sounds of music pumping and relaxed people chatting.

Simple Raw  Oehlenschlægersgade 12. My favorite Raw food restaurant in Copenhagen. Cosy sitting area, good variety in dishes. Try their raw sandwiches, the bread is oh.so.good.

42 Raw Pilestræde 32. Busy raw food restaurant with some non-raw options too like cooked quinoa salad just by the big shopping street Strøget.

Engmark Is Sometimes I make exceptions & this ice cream is one of them. Engmarks Is makes incredibly loving & organic popsicle ice creams with innovate flavor combinations (and sells them from their ice cream bike!). I’ve tried one that included potato and guess what? It was out of this world tasty! Find them on Instagram for daily locations.

Grøt Jaegerborgade 50 & Torvehallerne. For a porridge addict like myself these two places are heaven sent. Grøt serves over the top organic savory and sweet porridges in beautiful locations. Both breakfast and lunch/dinner options.

Manfreds Jaegerborgade 40. A foodie favorite restaurant serving great quality rustic food with some cool twists. Good green options and a real fun toilet. Feel fancy? Cross the street and head to big brother Relae owned by the same team. Although I have’nt been I’ll risk giving you this tip since Relae was recently voted nr 53 of the 100 best restaurants in the world.

Atelier September Gothergade 30. Close to Nyhavn and Strøget lies this beauty of a café + atelier. Go here solo, grab one of the many good reads lying around, order a fresh juice and a avocado sandwich and just relax.

Lagekagehuset Chances are slim that you won’t come across a ‘Lagekagehuset’ bakery while out and about in Copenhagen. Pop inside and get a high quality danish rye sourdough bread and if you feel like something extra then ask for a ‘Chocorug’ – a divine little creation of dark chocolate and rye bread.

Strolls

The Botanical Gardens (den botaniske have) is nestled in the very heart of Copenhagen and you do not want to miss this for the world. Soak up some fresh air, get inspired by mama nature and just be.

Nørrebroparken is a one of many green gems in Copengahen. This park is especially huge and wonderful to have a stroll in after you’ve walked up and down Jaegerborgade (which you must). Great for the kids (myself included).

Christiania the free city of Copenhagen offers absolutely amazing nature, architecture and organic eats. Take a walk around the lake and then pop by Morgonstedet for lunch, Grønsagen for some organic fruit/veggie for later and the Grønne Genbrukshal for a cool reclaimed wood-experience.

Shops

Vaernedamsvej otherwise known as ‘Little Paris’ is a sweet street to hang out in. ‘Granola’ is a good brunch spot, cool shops are abundant and fresh flowers seems to be everywhere.

Pure Grønnegade 36. A wide range of top quality organic skin-care and makeup if that’s your thing. The service is impeccable and I often leave with a new nail polish.

Istedgade (only the second half – you’ll know what I mean). Go here for the vintage and independent designer shops.

Godthåbsvej is in a rather long street in a part of Copenhagen called Fredriksberg. It’s a nice walk if you want a slightly more calm shopping streak. You’ll find some really nice vintage stores here.

Jaegerborgade has got some great independent stores with designer-, vintage/swapping and home/interior shops. The amazing cafés, restaurants, health food stores and parks nearby makes this one of my favorite neighborhoods in Copenhagen.

H Skjalm. P   Nikolaj Plads 9. This place has all the top quality things for your kitchen. Ceramics, cutlery, pots’n pans.. When I’m here I dream of having a non empty-able gift card.

Designer Zoo Vesterbrogade 137. A fun shop/gallery/hangout where a few designers show and sell their work. Dangerously inspiring. Closed Sundays.

Buy fresh flowers outside shopping centre Magasin du nord because why not?!

Juicy Berry Bowl with Cardamom Cream

This summers dessert/breakfast/snack is heavily inspired by something called Rød Grød Med Fløde (which is the most fun thing to say in danish). Directly translated to english it’s ‘Red Porridge With Cream’. It’s eaten cold on hot summer days by danes and swedes (although mostly in the southern parts of Sweden) and today I’ve given this classic a healthy twist. The somewhat tart berry bowl is beautifully balanced by the raw dreamy cream and the cardamom in this is just divine. Just make sure to use freshly ground cardamom, my friend.

serves  5
Berry bowl
2 3/4 cup raspberries
1 2//3 cup red and black currants (can be substituted for half raspberries or strawberries and half rhubarb)
1 cup pure water
1 vanilla bean pod
2 tbsp arrowroot powder
2 tbsp date syrop or 6 large pitted dates, mashed

1. Rinse and look over berries for dirt or insects. If using rhubarb, peel and cut in small pieces.
2. Add berries and water to a medium sized saucepan. Slice vanilla bean and scrape out seeds, add both seeds and pod to the saucepan aswell as date syrup/mashed dates and bring to a boil.
3. Add arrowroot powder through a sieve to avoid lumps, whisk with a fork to combine well.
4. Let the berry compote cook without lid on low temperature for 10 minutes. Set aside to cool completely.

Raw Cardamom Cream
1 1/4 cup raw cashews, soaked for at least 5 hours
3/4 cup pure water
1 heaping tsp raw honey (maple syrop/liquid coconut nectar if made vegan)
4 whole cardamom pods
1 pinch high quality salt

1. Open cardamom pods, add the black seeds to a mortar and grind until fine and fragrant
2. Add all ingredients to a high speed blender (using an immersion blender works well too) and blend until very smooth and creamy. Add more water until desired consistency is reached. Refrigerate.

Arrange
Divide berry compte in 5 bowls, add two spoonfuls of cardamom cream and give it a little swirl. Add some fresh berries and extra cardamom to finish. Some roughly chopped nuts is a nice addition too. Enjoy!
