We live in a country of traditions and it’s our tradition to not let our guests leave our home without serving them some good snacks, food or desserts. But are you also one of those who are used to running to the market to get snacks and desserts every time some unexpected guests drop in?

Not anymore. We have brought you some quick and appetizing recipes that you can literally make in minutes every time your doorbell is rung by that adorable and loving and equally unexpected friend, cousin, relative or neighbor.

1. Fried Onion Rings

Preparation time: 8-10 minutes

Ingredients:

3 large onions cut into ½ inch thick rings

For batter: ¼ cup whole wheat flour, ¼ cup corn flour, ¼ teaspoon garlic paste, a pinch of red chilly flakes, 1 teaspoon lemon juice, ½ teaspoon salt, ½ teaspoon pepper, ½ teaspoon oregano

Recipe: Heat oil in a pan. Now mix all the ingredients of the batter well to form a thick paste. When oil is sufficiently hot, dip onion rings in batter and fry till golden. Serve hot with chutney or tomato ketchup and watch your guests relish the mouth-watering snack!

2. Instant Cheese Bites

Preparation time: 10-12 minutes

Ingredients:

200 gm paneer (cottage cheese) cut into ½ inch thick triangular pieces

chaat masala

oil for frying

For batter: 4 tablespoons refined flour, 1/3 cup water, ½ teaspoon chilly powder, ½ teaspoon chaat masala, 1 teaspoon crushed garlic, a few carom seeds and salt to taste.

For coating: ½ cup breadcrumbs, 2 tablespoons sesame seeds, 1 tablespoon semolina

Recipe: Put oil in a pan for heating. Sprinkle chaat masala on paneer pieces. Now mix all the ingredients of the batter in a large bowl and all the ingredients of coating on a plate. By this time your oil will be perfectly hot for frying. Dip the pieces of paneer in batter and coat them in the coating. Fry in hot oil till golden. Repeat the process for all the pieces of paneer. Serve them hot. Your guests will surely love them.

3. Baked Potato with Spinach and Corn

This is nothing less than a complete meal recipe. Just bake it and you would not require any other dish for the dinner!

Preparation time: 18-20 minutes

Ingredients:

2 cups finely chopped spinach

½ cup corn kernels

2 finely chopped onions

1 chopped tomato

2 tablespoons tomato ketchup

4-5 garlic flakes

2 tablespoons butter

salt and pepper to taste.

For potato and paneer mash: 3 boiled and crumbled potatoes, 150 gms crumbled paneer, salt and pepper to taste, 1 teaspoon lemon juice.

Recipe: First of all prepare the potato and paneer mash by mixing all the mentioned ingredients well. Heat butter in a pan and add garlic. Add onions and tomato and saute for 2 minutes. Add spinach, corn, tomato ketchup, salt and pepper and mix well. Remove this mixture from the fire. Now grease a baking dish and spread the potato and paneer mash layer at the bottom. Spread the spinach and corn mixture over it forming another layer. Grate cheese and bake on high for ten minutes. Serve deliciously hot!

4. Bread Pizza

You do not need to keep a pizza base in your refrigerator all the time. Bread is an amazing substitute.

Preparation time: 10 minutes

Ingredients:

bread slices (as per requirement)

diced vegetables – onion, tomato and capsicum

pizza sauce or tomato ketchup

salt to taste

mozzarella cheese

Recipe: Spread pizza sauce on bread slices and put diced vegetables on them. Sprinkle salt and shredded mozzarella cheese and bake for 6-7 minutes. Cut into pieces and serve hot! You can prepare about 3-4 bread slices at a time in an oven and, trust me, it will taste as good as the normal pizza.

5. Mix Vegetables and Paneer Jalfrezi

Preparation time: 10 minutes

Ingredients:

8-10 long pieces of paneer

1 tomato cut into long pieces

1 carrot cut into thin long pieces

8-10 beans

½ yellow or red bell pepper cut into thin long fingers

½ green capsicum cut into thin long fingers

½ teaspoon cumin seeds

½ teaspoon mustard seeds

5 tablespoons tomato puree

1 teaspoon ginger garlic paste

1 teaspoon coriander powder

1 teaspoon chilly powder

½ teaspoon dry mango powder

salt to taste

2 tablespoons oil

Recipe: Heat oil in a pan and add cumin and mustard seeds. Allow them to crackle and then put ginger garlic paste. Now add all the dry spices and then tomato puree and salt after about 20 seconds. Saute the mixture for 2 minutes. Add all the vegetables except paneer and saute. After 2 minutes add paneer pieces and mix well. Serve deliciously hot with chapati, kulcha or naan.

This is a fast recipe which can serve the purpose of a dry dish if there are unexpected guests at your place at the time of lunch or dinner. Believe me, they will love it!

6. Tangy Tomato Rice

Preparation time: 8-10 minutes

Ingredients:

1 cup rice

1 finely chopped tomato

½ cup tomato puree

½ teaspoon red chilly powder

½ teaspoon turmeric powder

1 teaspoon lemon juice

1 tablespoon cooking oil

½ teaspoon mustard seeds

4-5 curry leaves

salt to taste

Recipe: Put rice to boil on one flame. On the other flame, heat cooking oil in a pan and add mustard seeds. Allow them to crackle and then add curry leaves. Next you need to add all the remaining ingredients and saute for 2-3 minutes. By this time your boiled rice will be ready. Strain it in a sieve and add to the pan. Toss well and serve hot!

7. Instant Oreo Cake

Preparation time: 8 minutes

Ingredients:

20 Oreo biscuits

240 ml milk

3 tablespoons sugar

¾ teaspoon baking powder

oil for greasing

Recipe: Put all the ingredients in a mixer and blend for about 20 seconds. In the meantime, grease your microwave-safe dish. Now add the batter to the dish and microwave on high heat for 5 minutes. Allow it to rest for a minute and serve. This is one of the quickest cakes that can easily be made while your guests take their time to settle on your sofa!

8. Fruit cream

This is a desert which is loved by both children and adults equally. And the best part is that it can be made instantly even if your guests have dropped in at an odd hour. The health quotient enhanced by fruits is added advantage.

Preparation time: 5 minutes

Ingredients:

200 ml fresh cream

4 tablespoons powdered sugar or 40 ml condensed milk

fruits of your choice cut into small pieces

50ml milk if you are using condensed milk

Recipe: Mix cream and powdered sugar or condensed milk well. Add milk if you are using condensed milk. Add fruits and it is ready to be served!
