I am so, so sorry.

I’m sorry that it is smack dab in the middle of Girl Scout cookie season and I am throwing this in your face.

Because I know the temptation that comes along with those sweet smiles from the impossibly cute Girl Scout sales people.  It is so hard to resist purchasing a box or ten and you get the added bonus of feeling as though you helped your community at the same time as feeding your sweet tooth.

Trust me, I know your struggle.

But now I am taking that struggle and turning it into quite possibly my favorite creation of all time (I know I say that all the time, but for reals…this is legit).  So go support your local Girl Scouts by purchasing as many boxes of Thin Mints as you can and let’s make some Thin Mint Cookie Butter!!!!



In case you have somehow been living under a rock, you have heard about the amazing, life affirming deliciousness that is Cookie Butter.  Trader Joe’s did wonderful things when it created this treat from Heaven.  I don’t know about you, but I am a bit obsessed with the stuff.  But I was ready to create my own, and I wanted to use whatever cookie struck my fancy.

Enter Thin Mints…

Are you getting bombarded with texts and emails from friends whose kids are selling cookies and you feel the need to purchase some from everyone?  No, just me?  Okay, well it’s not entirely altruistic when I get to scarf down a box or two of cookies, but I digress.

When I looked into my pantry and saw multiple boxes of Thin Mints, I knew that I must attempt to make cookie butter with them.  The problem was, all of the recipes that I found online required way too much work for my lazy girl attitude or worse yet, needed a run to the grocery store for ingredients.  Nope, not happening.  So I set to work with what I had on hand and magic happened.



Thin Mint Cookie Butter

Serves: 1 pint

This cookie butter is to die for and only needs two ingredients to make. Support your local Girl Scouts and stock up on Thin Mints while you can!

Ingredients

2 cups chopped Thin Mints (I had about 5 left over from one box)

½ cup canned coconut milk

1 tsp sugar (optional)

Instructions

Roughly chop cookies and add to food processor. Grind into fine crumbs, and while the food processor is still running, add ½ cup canned coconut milk. Continue to grind until the mixture becomes smooth and thickens. If you desire, add 1 tsp sugar and grind again to ensure it is well combined.

Such a simple and straightforward process created one of the most amazing snacks / desserts out there!  I like to use my Thin Mint cookie butter as a dip for strawberries, apples, bananas, pretzels or you know…spoons!

Yes, you will want to eat it right off the spoon.  I mean, it is THIN MINT COOKIE BUTTER!!!

So I will just leave this last picture with you and assume that you are no longer reading this because you are off to make your own cookie butter right this second, and that is a wise decision.
