Happy Thanksgiving Ya’ll!

I’m willing to bet that if you’re reading this, you are…

a) tired of watching football

b) frantically searching for a homemade sweetened condensed milk recipe because you ran out

c) taking a breather before you head back into the kitchen for round 2

e) checking your favorite blog so you can save $5 and make your own peppermint mocha latte, because…

f) the triptophan is about to kick in and you still need to strategically plan out your Black Friday shopping experience.

Or possibly you’re all of the above?

No matter the reason why you’re here, I’m thankful you are.

I firmly believe God has given this blog to me as a ministry – a way to for me to share my gifts with others who may benefit from them as well.  It’s important to me that you all know that I appreciate you.  It’s an honor for me to share my experiences (both good and bad) with food, natural living, and frugality and it’s something I never want to take for granted.

Thank you for grace when I’m wrong.  Thank you for cheering me on when my budget isn’t on target.  Thank you for sharing your experiences with me in return, and everyone else who might read, so that we can all learn together.

Thank you for being the faithful and loyal reader you are.

There’s a lot going on in the blogosphere that I want to share with you guys today, but like many of you, I’m spending some quality time with my family and enjoying these two precious little ones:



So I’ll round up everything worth sharing at the moment and let you sift through it at your convenience.  We’ll return to regularly scheduled programming next week, when we’re ready to move past leftover turkey sandwiches and turn on the Christmas tunes (if you aren’t already ).

New Recipes

On a whim, I’ve transformed two traditional Thanksgiving recipes into real food versions.  If you haven’t started your side dishes, feel free to use these.  (Note:  As of this posting, we haven’t eaten these yet.  I’m sure they’ll be delicious, but feel free to adjust the ingredients as you see fit.)

Sweet Potato Casserole:  3lbs sweet potatoes, washed/peeled/chopped into 1/2″ cubes.  Roast at 400F until fork tender (approx 60-70 min).  In a large bowl, combine 1/2 cup homemade sweetened condensed milk with maple syrup (or use the dairy-free version), 2 eggs, 1 tsp vanilla, 1/4 tsp cinnamon and 1/4 tsp salt.  Toss well with roasted potatoes and bake for 30 minutes at 350F.

Corn Casserole:  In a large bowl, combine 2 cans organic corn kernels (or equivalent fresh) drained well, 2 beaten eggs, 1 cup pureed cauliflower, 1 cup Masa (or corn meal) and 1/4 cup melted butter.  Pour into a lightly buttered 8×8″ baking dish and bake for 45 minutes at 350F.
