INGREDIENTS::

Basmati rice                      2 cups

Ghee                                 1 tbsp

Bay leaf                            1

Cloves                               4

Cinnamon stick                 1" inch

Cardamoms                       2

Javetri                               1

Star anise                          1

Peppercorns                      1 tsp

Onion                                1(sliced length wise)

Ginger-garlic paste            2 tsp(adjust)

Green chilies paste            11/2 tsp(adjust according to spice level)

Mint leaves                        1/2 cup

Coriander leaves                1/2 cup

Mixed vegetables               1 cup(carrots, beans, green peas)

Curd                                  2 tbsp

Salt                                    as needed

Water                                 3 cups

Saffron                               3 strands

or

Yellow food color              a pinch

PROCEDURE::

1)Wash and soak the basamati rice for an hour.

Soak the saffron in milk.

2)Melt ghee in a thick bottom pan,  then add the bay leaf, cloves, cinnamon stick, cardamom , javetri, peppercorns. Saute for 1 minute.

3)Add the onion and saute till they turn into golden color, add the ginger-garlic paste saute till the raw smell leaves it.



4) Add the mixed vegetables and let them fry for 2 minutes. Now add the mint leaves,coriander leaves and green chilies paste. Let them fry until the leaves become mushy(1 min approx)



5) Add the curd to the mixture and mix well . Let the vegetables cook well with the curd and whole garam masala items (approx 4-5 minutes).

Now add water and salt . Once the water boils then add the rice to it.

6) Cover the lid and let it get cooked in medium flame. Check in between but don't mess the rice.

As the rice soaked for 1 hour it will get cooked in 5-7 minutes.

When the rice is almost done then add the saffron soaked milk(or food color to it) or mix the food color in water and then add it.

Let the rice sit for 5 mins.

Serve with some boondi raita or curry.
