JOB TITLE: Master Brewer
JOB DESCRIPTION: Management of production facility, quality control, and product development. Supervises all brewing, training of assistant brewers, sanitation and safety procedures. Maintain lineup of standard Company’s high quality, specialty craft beers.
Innovation:
• Research and develop new recipes, and production methods for commercial release.
• Identify new production materials that will allow for continuous innovation.
• Consistently improving upon existing recipes to ensure the brewery is a flagship in the Craft Beer industry.
• The knowledge to create world class old world sour beer using new world ingredients and process
• Barrel aged experience mandatory
• In depth passion in the art of fermentation.
• Microbiology background is a must as several yeast and bacterial blends are to be utilized.
Brewery Operations:
• With Management Team, develop and implement long & short term planning goals. Collaborate on all production activities and create schedules to meet sales forecasts and demands
• Monitor and continuously improve brewing operations with regards to efficiency, cost reduction and profitability
• Translate the overall business strategy into operational goals and objectives for the brewery
• Researches and implements industry trends and compliance initiatives to evolve the brewery operations standards
• Standardize procedures and protocols and ensure they are being adhered to

• Develop and manage a progressive training program that is in line with Company objectives
• Maintain brewing areas to ensure operations comply with Company Quality, Sanitation and Safety standards
• Oversee the purchasing and negotiations for brew house materials, and packaged goods, as well as the inventory management of above and finished products
• Assess equipment purchases and major expenditures to maximize benefit; seek appropriate level approval(s)
• Guarantee a safe working environment for employees by maintaining the facility and equipment in an optimal working environment and enforces adherence to safe work practices.
Quality Control
• Overall goal is to produce the highest quality beer as possible with regards to consistency and taste
• Oversee the Company’s Quality program and practices
• With the Quality Manager, develop and review quality reports/statistics to ensure consistent, quality finished goods. Also, with the QC team, ensure compliance standards are consistently met or exceeded
• With the Head Brewer and Brewing team, ensure that Standard Operating Procedures are adhered to, improved upon where applicable and trained to for new hires/transfers
Knowledge, Skills & Abilities
• Exceptional analytical, decision making and problem solving skills
• Solid / proven knowledge of the craft beer and brewing industry
• A strong understanding of process controls
• Excellent leadership skills with the proven ability to lead and motivate a team and maintain a positive morale in the workforce.
• An understanding of Laboratory Operations / Quality Control procedures

Minimum Education &/or Experience:
• A formal brewing education or professional brewing experience is considered above all

• BA / BS in Chemistry &/or Biology, Business, Management, Operations Research, or
• Engineering (Electrical or Mechanical) is preferred. MBA is a plus.
DETAILED PROFILE OF THE COMPANY/CONCEPT

We are building a platform for success in the craft beer market - while also celebrating our local roots amongst the natural beauty of the Region.**
Focus: Our brewery will have a defined focus on developing a very strong portfolio of beers including a Barrel Age Program; with additional focus on sour and complex beer styles.

• With our desire to produce barrel-aged beers, we made the decision to be located in the Niagara region. The chosen location allows us easy access to used wine barrels and facilitates the ability to capture wild yeast out of fruit-producing fields.
• The notion of ‘buy local’ was critical in finding a location to produce ultra-premium craft beer. With our Barrel Series beer, we will create a product that speaks to the terroir of the Escarpment - and all its bountiful agriculture.

Location: The brewing company will be located in Niagara’s Twenty Valley (in Ontario, Canada); just 30 miles over the New York border, offering proximity and ease of access to the US.
• Located directly on the established Niagara Wine Route that receives 1.4 million visitors annually.
• Access to fresh, local ingredients (within 3 mile radius). Situated on the wine route the area is home to some of Ontario’s finest agricultural land with orchards, vineyards, fruit and vegetable farms providing an ideal location to make fresh premium quality beer with access to fresh, local ingredients.
• Space is not a Constraint. We wanted to be located in a non-metropolitan area that would allow for a great deal of affordable space for production and warehousing while still having heavy customer traffic with easy highway access and close proximity to densely populated areas.
• Fertile Growing Conditions. We have a sizable parcel of land that will provide fertile growing conditions that will allow us to grow some of our own ingredients - as well as have access to an abundant supply of quality natural ingredients (to be sourced from local growers close to our brewery).
• Unique Location & Floor Plan/Architecture. The showcase production facility and taproom will be located in a historic building, located in close proximity (within a few minutes) to numerous wineries, and with excellent parking facilities. The brewing company will directly benefit from the tourist traffic on the wine trail and offer a unique break from wine tours and hiking trails.
o New state of the art, glass enclosed brewing facility will expand the current 5200 sq. foot existing structure to approximately 16,000 square feet.
o In addition to the production brewery, the facility will include a spacious tasting room for sampling the entire beer portfolio – as well as a dining area for events.
Production Facility: By designing and constructing an add-on purpose-built facility (rather than leasing an existing space), the brewing company can realize immediate efficiencies through design. The modularity of the layout allows for adjustment and/or expansion of production that may be fueled by growth.
• Barrel Aged Facility. A central feature of the new production facility will be the glass enclosed barrel aging room. While incorporated into the brewery as a central element, the barrel aging room is completely sealed and separated from the production brewery systems. A separate receiving area and access point will allow for the addition of fresh local fruit without crossing over the flow of day to day beer production.
• Room for Expansion. The design has considered the possibility of ‘quick response’ expansion by planning for exterior fermentation tanks that could be assembled and positioned on the existing property in a short time frame.
