Desserts that are guilt-free? It’s the holy grail really to me. I have a big big sweet tooth, but I also have to really watch my weight. I rarely post sponsored content, but when Tassimo sent me the lovely recipes below, I couldn’t resist sharing them as they are very me! If you’ve made it this far into 2014 without breaking your healthy eating resolutions, well done! It’s not easy, but you’ll see the rewards of your efforts soon, and it’s probably time that you gave yourself a bit of a treat! Of course, you don’t want to undo all that hard work with a huge binge, but that doesn’t mean you can’t enjoy some guilt-free, tasty desserts. Here are 5 temptingly delicious dessert ideas, all made with natural, whole food ingredients.

Chocolate-coffee meringue creams

Who says you can’t enjoy cream cakes once in a while, without worrying about your weight? These are quick, easy to make and just a little decadent, but still super low on calories, making them ideal for when you need to stay on top of your numbers. Start by melting a couple of squares of dark chocolate into a bowl. Add a couple of teaspoons of fresh Tassimo coffee to 15ml of whipping cream (per serving), and whip until thick and stiff. Take two ready-made meringue shells and sandwich together with the cream. Drizzle with molten chocolate over the top and allow the chocolate to harden, then enjoy! Perfect for mid-morning coffee breaks.

Poached fruit in sticky sauce

Perfect when you need a little dessert, but don’t fancy heading down to the shops for complicated ingredients. You can use virtually any firm fresh fruit – peaches, plums, apples, pears or figs will all lend themselves to this recipe. Slice the fruit into halves and add a small knob of butter on top, and drizzle with a teaspoon of honey. Sprinkle on a few chopped nuts and half a teaspoon of mixed spice. Place under a pre-heated grill on a high temperature and cook until the fruit has softened, and is slightly charred. Serve with a generous dollop of fat-free Greek yoghurt.



Fast, fluffy pancakes

Nothing beats a stack of pancakes, covered liberally in fresh fruit and syrup, at any time of day or night. This easy recipe guarantees fluffy, light-as-air pancakes that are rich in protein, and low in carbs, making them really filling, without weighing you down. Perfect for days when you feel like eating dessert all day! Just combine one medium sized egg with 200g of fat free Greek yoghurt, 65g of wholemeal flour and a teaspoon of bicarbonate of soda. Mix well and cook in a preheated frying pan, with just a little oil. Top them off with anything that takes your fancy. Dust with sugar and lemon juice, make a quick fruit sauce by puréeing a handful of berries and a teaspoon of honey, or drizzle with maple syrup.

Crushed raspberry creams

In a small bowl, stir in sugar and a few raspberries, crushing the fruit as you stir. In a separate bowl, fold yoghurt and crème fraîche together with sugar and meringue pieces. Divide the raspberries among four small glasses and top with the creamy meringue mixture. The raspberry pots can be eaten straight away or will keep in the fridge for 4 hours.



Baked pears

Cut four pears in half and place on a baking tray. Scoop out their cores and make a dip in the centre of the pears. Put one heaped teaspoon of ricotta into the dips. Heat the oven to 190C/fan 170C/Gas Mark 5 and roast the pears for 10 minutes. Crush 8 amaretti biscuits and then scatter the biscuit crumbs over each pear. Put the pears back in the oven for another 10 minutes and then serve with honey.
