It's tax-time in the USA and I suppose that is on my mind, but that's not what I'm here to talk with you about today. I want you to take a good look at what you're eating. How much real nutrition is left in your food?
When I lived on a farm, I learned that the nutrients in our vegetables start breaking down as soon as we harvested them. Left in the fridge for a week or two, how is that broccoli that was so firm and crisp when you picked it?
Sweet corn is a better example. The old farmers taught us that the best corn you'll ever eat is picked while the water is brought to a boil on the stove! It's true! This is because the sugar in the corn begins turning into starch as soon as the corn is picked. If you've ever had really farm-fresh food, you'll know what I mean.
Since most of you reading this probably live in cities, it is hard to grow a big garden and eat really fresh food, so we have to do the best we can. So, I want you to look at all the foods you're eating and estimate how long it has been sitting on the grocery store shelf. Is there much life left in it?
In the USA, most of our food is picked before it is ripe and trucked an average of 1000 miles before it arrives at the local store. It is better if, during the growing season, you can shop at farmers' markets so you know what you're buying is still full of life.
Even freshness doesn't guarantee that you are getting all the minerals that your body needs, though. It's a start, but did you know that minerals are not spread around the earth in a uniform distribution? Some areas have too little of key trace minerals and, as a result, the people in those areas develop deficiency diseases, such as cystic fibrosis or diabetes. The Amish farmers in parts of Ohio eat food that looks healthy and fresh, but their children have a high rate of muscular dystrophy, for example.
