If you think I’ve bludgeoned you enough with Mardi Gras themed food, think again! Today is the last day, I promise.


/ESPRESSO CHIP PANCAKES.

Fat Tuesday is tomorrow, which signifies the end of the Mardi Gras celebration.  We celebrate Mardi Gras up until Tuesday because Lent begins the next day, also known as Ash Wednesday.  I’m sure you already know this, but I wanted to explain it for those who are new to the celebration.  It took me a while to put the concepts of Mardi Gras, Fat Tuesday, Ash Wednesday together, and I’m Catholic, so I really shouldn’t admit that.


/HUMMINGBIRD PANCAKES WITH CREAM CHEESE DRIZZLE.

Fat Tuesday is typically celebrated with pancakes, presumably because the six weeks that follow will be without such pleasures as butter and sugar.  This will not be the case in my house because we typically give up meat during Lent.  If you ask me to give up sugar and meat, I’m not sure I could get out of bed.  Don’t worry:  all of my savory Friday recipes with meat have been photographed and scheduled in advance.  Just because I’m living a life without ham hocks and yard bird does not mean you have to as well.


/CHOCOLATE COVERED STRAWBERRY PANCAKES.

Not pancakes, but just as good covered in syrup:

/RUM RAISIN WAFFLED FRENCH TOAST.

And let us not forget these beignets.  I printed the photo and hung it on my wall in my house.  I’m THAT serious about beignets.

/SMALL BATCH OF BEIGNETS. 

I had a hard time deciding between King Cake donuts and beignets.  I love them both.  Thank God I have two hands.

And because I had leftover sprinkles, I made homemade monkey bread muffins and sprinkled the top with them.

I made something with bananas that I found irresistible.  Generally, all things banana get gobbled up by my husband.  I’m thinking rum is the reason.  Isn’t rum always the reason?

If you need something to wash down all the sweets, there’s always my New Orleans inspired Gumbo.  A pot of gumbo that doesn’t feed an army, yet still evokes the same flavors with shrimp, okra, smoked sausage and chicken in a copper penny roux?!  Jesus, take the wheel!

/SMALL POT OF GUMBO.

Or, if a Po’ Boy is more your style, I gotcha covered there, too.  You can fry the shrimp for the po’ boy if you wish, but the best po’ boys I have had in New Orleans were not fried.  I know, I’m still living in shock over this.

Because I kinda feel like I’m a one-woman parade over this whole Mardi Gras thing, I drummed up some other bloggers that are in the spirit, too!

First up: Stef from Cupcake Project turned the famous Hurricane cocktail into a rum ball.  And I totally love her for it.  We just confimed:  rum is the reason.

Then, Erin from The Law Student’s Wife made King Cake French Toast.  I’m glad I’m not the only one obsessed with purple, gold, and green sprinkles!
