When I say Granola, you say Pumpkin! Granola! Pumpkin! Granola! Pumpkin! Not just pumpkin seeds in this crisp toasted and golden brown breakfast treat, but pumpkin spices something non-the-less! Everything about fall says PUMPKIN!  This pumpkin spice granola tastes more like it should be a dessert treat served over vanilla ice cream!



For the sake of the pictures here we have been eating it over peach, mixed berry, plain nonfat Greek yogurt or by itself bathed in almond milk in the mornings. This pumpkin spice granola is so freakin’ good! A great way to welcome the holidays into your home as your home will be fragrant with pumpkin spices and coconut as the oats toast in the oven.



As I stare deeply into the pantry each morning yearning for a new magical breakfast to appear that will make the kids think I am the Best Mom Ever… nothing happens.

Usually I offer my kids toast with cream cheese, cereal, no bake breakfast bars, muffins or oatmeal on school mornings.  But now there is this!

I love fresh strawberries, blueberries, banana and any fresh fruit I can get my hands on to top over homemade granola and nonfat Greek yogurt. It is my go-to breakfast that I eat almost every morning. Homemade granola is REALLY good made with butter, but I try to avoid butter and so for my homemade granola recipe I always use coconut oil. You can totally use butter in place of the oil if you prefer and it will be just as satisfying! A bowl of granola is a satisfying place for the heart. Why? Because the Dietary Guidelines for Americans recommends 21-25 grams of fiber per day for women and 30-38 grams per day for men. Fiber (with water) flushes toxins from the body and aids to lower bad cholesterol. Plus it fills you up longer so you do not feel the need to eat as frequently. Sustainable energy? Yes please!

Pumpkin Spice Granola has a secret!

The secret is there is no pumpkin puree in this granola recipe just pumpkin seeds and spices! Eeek! The horror of no actual pumpkin puree! But I promise it is delicious. My boys have been eating it about 4 times a week with almond milk and just love it for breakfast. It is a fun change from my chocolate homemade granola recipe, and basic granola recipe. The secret is pumpkin seeds and pumpkin spice along with healthy chia seeds and hemp seeds for added protein and healthy fats. So much wholegrain ingredients going on in this pumpkin seed granola combo. I think also there will be a pumpkin bar recipe made from any extra granola left overs… if there are any!

Pumpkin Spice Granola With Crispy Coconut Flakes

Ingredients

6 cups old-fashioned or quick oats

1 cup of pumpkin seeds

½ cup of hemp seeds

¼ cup chia seeds

¼ cup flaxseed meal

½ cup of walnut pieces

1 cup of sweetened coconut flakes

1 Tablespoon pumpkin pie spice

¼ teaspoon salt

¼ cup of coconut oil, melted

1 cup maple syrup

2 cups of dried cranberries (optional)

Instructions

Preheat the oven 325 Degrees F. In a large bowl combine oats, nuts and seeds, coconut flakes, cinnamon, salt, maple syrup and coconut oil. Stir and coat fully.

Evenly spread granola on two large rimmed baking sheets lined with parchment paper. Place in oven and bake for 25-30 minutes, carefully stirring the granola often so it does not burn on the edges. Granola is done when it is lightly browned. Remove from the oven and let the granola cool 15 minutes. Add 2 cups of dried fruit if you want. Pour into a large container and press and pack together which will form granola chunks. Let cool completely before sealing closed with the lid.
