I don’t know where the time went, but somewhere between writing my final project for my bachelor, working full time, and kinda sorta keeping up this blog – the holidays arrived. It seems like I was just getting ready for Halloween, and now I’m already way behind on Christmas shopping because every time I go out with good intentions to buy presents for other people I end up coming home with three new pairs of pants and a shirt for myself and nothing for anyone else. I’m not perfect, ok? Neither are you.

Thanksgiving

On the actual night of Thanksgiving I was so exhausted from my trip to New York and a business meeting in Stockholm that I curled up in bed at 7pm and allowed myself the luxury of eating two frozen Thai boxes because, it was a holiday after all. Luckily that weekend we were able to pull it all together for a perfect Thanksgiving with my dad, stepsister, grandparents, my boyfriend’s parents, and our roommate. We had turkey, pumpkin pie, and everything in between but no thanks at all to me, as I was stuck in a study dungeon working on my BA thesis.

VICE Christmas Party

Being in Denmark for the holidays is like travelling to the North Pole if Santa was always as drunk as his red bulbous nose insinuates. The streets are filled with Christmas markets serving hot wine and every weekend you’re faced with another “Julefrokost,” or a Christmas dinner (usually organised by your company or school.) The VICE Denmark Julefrokost’s are legendary but this last one definitely takes the cake. From a Christmas train ride through the city, to incredible food and wine served by I’m A Kombo, the night was filled with good vibes (read: open bar).

The American Pie Co.

I love Copenhagen. I love Christmas here, I love my friends and family here, and I love the food. But sometimes, and especially around the holidays, I still ache for little bits and pieces of home that I just can’t seem to find in the city. One of these things was pie. Pumpkin pie, chicken pot pie, key lime pie, I don’t pie-scriminate. I love ALL the pies. So when my friend told me about the first and only pie shop opening in Denmark, I couldn’t let even a week pass before I ventured to face-plant into some of that goodness. The American Pie Co. on Skindergade did NOT disappoint! If you’re looking for a little slice of America this holiday season, can you PLEASE go there and buy everything?

The savoury pies were a hangover dream come true. My boyfriend and I shared the Pork, Apple and Sage and the Chicken, Rosemary and Thyme.

Phillippa Rice

Lastly, the holidays are all about love so you can go die of the cuteness in this adorable Phillipa Rice series. K, bye.
