The Fourth of July is the perfect time of year to get together with family and friends, watch fireworks and celebrate our nation’s independence. It’s also a great time to indulge on classics like burgers, barbecue and potato salad.

As much as we all love eating America’s favorite foods, we don’t love all the carbs and calories associated with them. It’s nice to know that there are healthy recipes out there, especially for children with cancer, who need to eat well-balanced and nutritious meals during and after cancer treatment.

One example of a healthy Independence Day snack (with an appropriate name) is the Antioxidant Avenger. Perfect after a summer’s day dip in the pool, this smoothie features fresh ingredients like pears and coconut water.

Here’s the recipe, which is featured in Danielle Cook’s book, Happily Hungry: Smart Recipes for Kids with Cancer:

Antioxidant Avenger

2 cups mixed berries, frozen

1/2 cup red seedless grapes, frozen

1 ripe pear, skin on, core removed and cut into chunks

1 Medjool date, pit removed

1/2 teaspoon minced ginger

1/4 teaspoon ground cinnamon

1 1/2 cups coconut water (or spring water)

3-4 ice cubes

Agave nectar or maple syrup, to taste

Put all the ingredients in a blender and process until smooth. Makes 2 (15oz) smoothies.

Nutritional information (per 15oz. serving): Calories: 225; Protein: 2.5g; Carbohydrates: 57.5g.
