One of my favorite kitchen tools has got to be the Crock Pot. You can throw everything in it, walk away and come back later to a yummy dinner. We try to use it as much as possible in our house due to our sometimes crazy schedule.
This recipe for sausage and peppers is so good. My husband requests it a lot and I'm happy to make it for him because I love it too.
What you need:
- 8 to 10 Italian sausage links (regular or spicy)
- extra virgin olive oil
- 2 green bell peppers- sliced
- 1 white onion- sliced
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1/2 teaspoon dried oregano
- 2 teaspoons minced garlic
- 3 tablespoons tomato paste
- 1 (15 oz.) can diced tomatoes
- 1 and 3/4 cup vegetable stock
- 3/4 cup Marsala wine
- 1/4 teaspoon red pepper flakes (optional)
- Italian sandwich rolls
Directions:
Heat up your oil in a large skillet pan. Cut sausage links in half then butterfly them (I like to do this so they lay flat on the bread). Cook for a few minutes on medium heat just to brown them a bit. Meanwhile, add all the other ingredients to the crock pot. Once the sausages are done, add them to the crock pot too. Stir it all together. Some of the veggies may not all be covered with liquid but once they start to soften, they will be. Stir every once in a while. Cook on high for 6 hours. Slice the bread in half, toast it in the oven then serve your sausage and peppers on top. Enjoy!
