Make these fun and yummy Jack o’Lantern Cupcakes with your kiddos.

Dixie Crystals joins us today as we celebrate a Spooktacular Sunday Supper with all sorts of frightfully delightful recipes that are sure to be the highlight of your night. I knew immediately that I would be sharing my Jack o’Lantern cupcakes with you. One of my favorite things about autumn is carving pumpkins, and what a fun way to incorporate that, than with these cute little, ghoulishly yummy cupcakes? I can not wait to see what everyone has shared.

To begin, preheat your oven to 350 degrees. Line a standard muffin pan with cupcake papers, and set it aside for now.

In a bowl, combine 1 cup of flour, 1 ½ teaspoon of baking powder, 1 teaspoon baking soda, 1/8 teaspoon of salt, a teaspoon of cinnamon, ½ teaspoon of nutmeg and 1/8 teaspoon of allspice. Stir these together and set it aside for a moment.



In your mixing bowl, beat together 2 eggs, a cup of Dixie Crystals granulated sugar, 1/3 cup plain apple sauce, 1/3 cup extra virgin olive oil and a cup of pumpkin puree.

Add in your dry mixture and mix until it is smooth.

Finely chop 1/3 cup of walnuts or pecans and fold them into the batter.

Scoop the batter into your muffin pan and bake for 16-18 minutes or until they test done with a toothpick. Remove them to a cooling rack and cool completely.

When your cupcakes are cooled, it’s time to do some decorating.

First, you will want to frost your cupcakes with your favorite white frosting. You could use a buttercream or a cream cheese frosting, whichever you prefer. I made buttercream frosting for these particular cupcakes. Mix some orange food coloring into the frosting before frosting the cupcakes. These are pumpkins after all!

To get a cute look on the cupcakes, I piped the frosting in a curved pattern to give it the feel of the ridges of a pumpkin. Frost all of the cupcakes this way.

Now to make these pumpkins…into Jack o’Lanterns!

You could pipe some black frosting onto these, but I think that makes for a very messy decoration, so I’m sharing a super easy trick with you. The trick for your treats.

Go to your local craft store and buy a small package of black fondant from the baking section.

Put a couple drops of cooking oil in your hands and rub them all over your palms and fingers to keep the fondant from sticking to you. Knead a little bit of fondant until it is soft and pliable.

Roll it out on a smooth surface.

With a knife, cut little triangles for eyes and little crescent mouths.

Gently place the pieces on your cupcake.  BOO-ya! Jack is born.

Repeat with all of the cupcakes. You can get creative with these if you like – making different expressions and such.

This is also a great craft for the kiddos to do!
