I don’t know what got into me last week, but I did NOT feel like cooking. I think sometimes it just gets monotonous…and late afternoon/early evening seems to be the hardest time of my day. Jon David is home from school and needs help with homework, Lucy Goose is fussing because she wants his attention, and I’m starting to feel tired. What is it about 5 pm that makes me feel like it’s time for bed?
Times like that, I’m grateful that I planned meals ahead. Otherwise, there is no way I’d be packing up the kiddos and heading to the store! I’d most likely be ordering pizza or having my husband pick up food, which gets expensive and is never as good as anything I could have just made.
Make sure to print out a grocery list with all the needed items already filled in, or a blank one so you can write what you want on it yourself!
Here is what’s on the menu this week:
Monday: Grilled Chicken Tenderloins (without the grill!)
I make this recipe often — it’s a copycat of Cracker Barrel’s Grilled Chicken Tenderloins, which I LOVE!

I’ve never made this, but it’s easy and it looks good! I think the boys will love it.

Wednesday: Pesto Ranch Crockpot Chicken Thighs
This one is new to us also, but I love the idea of that flavor combo, and a crock pot dinner always appeals to me!

Thursday: Beef Bourguignon
A couple notes on this — yes, it’s fancy pants recipe. BUT SO DELICIOUS. I’ve only made it a couple times, but for the love — amazing. Also, I leave off the cognac because…cognac. Sometimes you just have to go for the fancy food. You only live once!

Friday: Crockpot Buffalo Chicken Sandwiches
We all love this recipe and it’s an easy dinner for Halloween night. And yes, I just went from fancy pants rich people stew one night to shredded buffalo chicken the next. I am a study in contradiction.
