Have you ever read a great book, seen an inspiring movie, or heard a great joke, and thought, “I’ve got to share that!” Of course you have! Here are a few things from my Reader in the last week that inspired and motivated me, made me happy, sad, and angry, made my stomach growl, and made me laugh.

For my Weekly Reader post this week, I thought it would be a good time to spotlight some of the amazing vegan recipes that have popped up in my reader lately. If you’re looking for a healthy, cruelty free Independence Day celebration the following posts are a great place to start. Disclosure: I’ve thrown a few of my own recipes in the mix this week.



In addition to these great recipes, this cloud cover during my 7 mile run on Sunday felt pretty inspiring.

Appetizers

Choosing Raw, Seasonal Appetizer: Cucumber Rounds with Raw Herbed Dill Cashew Cheese. Something cool and crisp for a hot day, thanks to Gena. Also try Cashew and Squash Canapés for a raw vegan twist on deviled eggs.

Post Punk Kitchen, Garden Corn Chowder with Basil & Chives. I love corn chowder, and IsaChandra’s recipe sounds so good. Just reading the ingredient list (and looking at the picture) makes my mouth water.

Main Course

The Iron You, Grilled Ratatouille Muffuletta. Somehow I just found Mike and Margherita’s blog, even though they are fellow Fitfluential Ambassadors. They have an abundance of scrumptious sounding recipes (not all vegan). This one is though and sounds delicious!

Healthy. Happy. Life., 10 Veggie Burgers for Father’s Day. Never mind that this was a Father’s Day post. Nothing says 4th of July barbecue like a burger and here are 10 of Kathy’s best.

Tempeh Burgers. This is the recipe that made me love tempeh! Perfect for the grill (or indoors if you live in the 110+ weather of the desert like I do).

Where’s the Beach, Tasty Tuesday – Tequila Lime Tofu Salad.  I love roasted corn and veggies right off the grill.  Heather’s salad combines a spicy marinade, tofu, and the roasted veggies.

Side Dishes

Vegan Miam, Vegan Panko-Crusted Mac + Cheeze. I put this in the side dish section, but if you love mac and cheese like I do, you could make a full meal out of Rika’s recipe.

The Naked Kitchen, Refreshing Watermelon Salad. Hot weather is the perfect time for cool and refreshing food, and nothing is as cool and refreshing as watermelon. Kristy’s salad will be great alongside those burgers on the 4th!

Thug Kitchen, Who’s the Badass that Brought Pasta Salad? You Are. The perfect dish to bring to a 4th of July picnic, the folks at Thug Kitchen will make you giggle as you cook (as always…language alert).

Potato Salad. Here is my traditional version of a potato salad, using vegan mayonnaise. Another great potluck dish.

Southwest Salad with Black Beans, Avocado, and Quinoa. I actually posted this recipe on July 3 last year! It must be the perfect Independence Day side dish! I mean, I love bean salads, so adding avocado and quinoa can only make this even better.

Desserts

Fragrant Vanilla Cake, Raw Red White and Blue Dream Cake. If you need to bring a perfect dessert for an Independence Day party, Amy’s beautiful Dream Cake is it.

Healthy. Happy. Life., 4th of July Vegan Flag Cake with Coconut Whip and Berries. Kathy’s veganized version of a classic flag cake sounds delicious and looks very patriotic.

Arena Fitness, Festive Summer Fruit Skewers. Looking for a totally healthy, delicious, and beautiful dessert for the 4th? Go no farther that Stacey’s fruit skewers. Oh, and it’s easy too.
