With all of the heavy and rich food, not to mention all of the over eating, over the holidays I have been looking for some lighter and healthier options now that January is here. Of course, one of the first places that I started to look for recipes was my own favourite healthy recipes! Although many of my most popular recipes seem to be hot melted cheesy dips, grilled cheese sandwiches, quesadillas and other not so healthy dishes, I actually do not eat those things all the time! In fact I mostly eat a lot of healthier dishes that do not seem to get as much attention even though I find many of them to be more interesting. This is evident as I you go through my recipe archives and see all of the healthy ones! I had a real hard time trying to decide which recipes to include in this roundup! I am sorry for the length of this post but I could not bring myself to trim down the number of recipes in it and it is now the single largest roundup on Closet Cooking with a whopping 50 healthy recipes in it! This roundup includes breakfasts, appetizers, salads, whole grain salads, soups, side dishes, main courses and even sandwiches and those were just the categories that I started with and they represent only samples from each category!
