KISS* should be the mantra of every chef, but clearly it is not. I, for one, am tired of recipes whose requirements fill a grocery cart or a search of the Internet for some exotic ingredient whose usefulness extends no further than a single recipe. So I am delighted that this week’s Sunday Supper highlights simplicity in cooking using five ingredients or less.
One of my all-time favorite appetizers fits the criteria perfectly: Latkes with Salmon, Crème Fraiche, Caviar, and Dill. This appetizer packs an umami-like wallop of flavors and textures. The combination of crispy potatoes, smoky salmon, tangy crème fraiche, salty caviar, and aromatic, sweet, leafy dill sets off an explosion of flavors with each bite. Also, this appetizer is incredibly versatile. Dress it up or dress it down as the occasion requires. When entertaining a group of diet-conscious women, substitute a slice of English cucumber for the latke. When serving appetizers during halftime of a USC football game, substitute a large crinkle cut potato chip straight from the bag. When hosting the boss or a group of food snobs, use Beluga caviar instead of fish eggs from cuttlefish or even Tobiko. And don’t agonize over preparation of the latkes if you go the traditional route. They can be premade from scratch and frozen for future use. Or cheat like me and buy Trader Joe’s Latkes—they are actually quite good. Such is the popularity of this appetizer that Sous Chef and I have hosted parties where we have set up a Latke Bar. Sous Chef cooks fresh latkes on an electric griddle and the exultant guests customize their appetizer from an array of toppings spread out before them.
Go ahead and try these fabulous latkes! The ingredients are easy to find throughout the year, and their festive taste is suitable in any kind of weather. For an extra special touch, accompany the Latkes with a splash of Champagne.

Latkes with Creme Fraiche & Caviar

The potato latke can easily be substituted with sliced cucumber, potato chips, or crackers. This is a easy recipe perfect for entertaining. I frequently will use Trader Joe’s Latkes when I am pressed for time. They take about 10 minutes to bake, and I flip the latke halfway through to make sure it is crispy on both sides.

Ingredients
8 Latkes
1 package smoked salmon of your choice
1 container crème fraiche or sour cream
1 package of caviar, tobiko, or roe eggs
fresh dill to garnish
Instructions
Cook/reheat latkes.
Top latkes with layer of smoked salmon. Place dollop of crème fraiche or sour cream on top of salmon. Top crème fraiche or sour cream with about ¼ teaspoon of caviar, tobiko or roe eggs. Add spring of fresh dill for garnish.
