What’s better than a chocolate chip cookie? A chocolate chocolate chip cookie. These are pretty much brownies in cookie form, and they are now my new favorites. If you have chocolate lovers in your life you NEED to make these for them. They are going to go crazy! Plus – they are easy.



Brownies are one of my very favorite desserts. I LOVE a brownie that is pretty much exactly in the middle of cakey and fudgy. These cookies fit that bill exactly, but with the awesome addition of little pockets of milk chocolate goodness in case you didn’t get ENOUGH chocolate from the cookie itself.



This post is really bittersweet to write. It’s my 2nd post here on Chocolate, Chocolate, and More, and I never imaged that between the last time I talked to you all and now we’d lose the ring leader of this awesome circus, and someone I not only looked up to and respected for some many reasons, but also had grown to be someone I would’ve liked to call a friend. I didn’t get to spend nearly enough time with Joan, and only actually met her in person twice. Both times at IFBC (2014 and back in September).



The thing that struck me most about her was her kindness, her openness, and her complete and utter lack of any kind of b.s. To be quite frank, Joan told it like it was – and in a world where the food is staged, the photos are staged, and sometimes it seems your whole life becomes a “brand” that needs to have an image – it was really really refreshing. It also struck me so much how willing she was to help, encourage, and share with those of us who are coming up in the blogging world.

In this industry, it can get a little crazy. Sometimes, it can seem like you can’t really hang in some circles unless you have the minimum required pageviews and Facebook page likes, and that can get discouraging. Joan wouldn’t have it. You never got a hint from her that you weren’t valued because she’d never heard of you, or because you were a very very small fish swimming in a really tiny ocean. She just rocked. Plain and simple. She was an awesome person to be around! No one is missing her more than her family and those she called close friends – but our tight-knit blogging community is feeling the loss, a lot. It’s so heartwarming to see more of this industry driving towards community and inclusion and supporting each other rather than competition.

I thought it only fitting for this post to be loaded to the gills with chocolate – since my first post featured none. This one is for Joan, and her memory, and her legacy, and for those she’s leaving behind. Your time here was much much too short, but your legacy remains alive! Every time I cook or bake with chocolate – I think of you.

Chocolate Chocolate Chip Cookies

Ingredients

8 ounces 60% bittersweet chocolate, chopped

4 tablespoons butter

2/3 cup flour

1/2 teaspoon baking powder

2 large eggs

1 cup white sugar

1 tablespoon pure vanilla extract

1 bag (12 oz) milk chocolate chips

Instructions

Preheat your oven to 350.

Place the chopped chocolate and butter into a medium microwave-safe bowl. Microwave in 20 second bursts until melted. Don't overheat! It'll burn the chocolate.

In a separate bowl, combine the flour and baking powder. Stir to combine.

In another bowl, combine the eggs, sugar, and vanilla. Mix on high speed until the color is lightened, about 3 minutes.

Pour the chocolate into the eggs, and mix on low for about 1 minute, until the chocolate is incorporated. Gently stir in the flour just until combined. Pour in the chocolate chips and stir until they are evenly distributed through the batter.

Place in dollops on a cookie sheet that is lined with parchment paper. Bake for 12-14 minutes. Let cool on the pan for 5-10 minutes, or until you can remove them without the cookies falling apart. They are very breakable until they have cooled a bit!
