Good morning!  Did you have a nice weekend?  I was in town for the first time in 4 weekends, and it was so nice to just relax with TheBetterHalf.  And cook – I made 6 recipes for the blog!  Including this soba noodle salad!

Today I have two ways to make your Monday better…a quick, easy and delicious dinner idea, and a GIVEAWAY!

These Soba Noodles with Spicy Almond Butter Sauce are so simple to prepare and sweet/spicy/savory Asian inspired sauce tastes incredible.  The recipe comes from an amazing cookbook, Almonds: Recipes, History, Culture, and you can win a copy!  In fact I have three copies to give away today.  Scroll to the bottom of the post and enter to win!





I love cooking with soba noodles. They are thin Japanese noodles made with buckwheat flour, which gives them a slightly nutty flavor. Best of all, they cook up in 5 minutes! How’s that for a quick weeknight meal? And what makes this dish even quicker is that the veggies in here are all raw. Carrots and cucumbers are the main veggies, although you could use anything you want!  Snap peas or lightly steamed broccoli would be great additions.  A red Serrano pepper adds some heat and fresh cilantro adds a bright, fresh flavor.

And then the dressing – this stuff is so good. It is a mix of almond butter, soy sauce, lime juice, Sriracha, brown sugar, and sesame oil – hello flavor!  I think I could drink that dressing.  Next time I make this recipe, I’m going to double the dressing and use some for a marinade for chicken or shrimp – the addition of some protein makes this literally the perfect dinner!

The salad is finished with some toasted almonds and sesame seeds, for added crunch and flavor.

Soba Noodles with Spicy Almond Butter Sauce

Soba noodles are mixed with fresh vegetables and tossed in a sweet and spicy Asian almond butter sauce. So easy to prepare and so full of flavor!

Ingredients

For the Almond Butter Sauce

1/4 cup (60 g) almond butter

3 tablespoons fresh lime juice

1 tablespoon soy sauce

1 tablespoon light brown sugar

2 teaspoons Sriracha

2 teaspoons sesame oil

1 small clove garlic, minced (optional)

For the Noodles

8 ounces (225 grams) soba noodles

4 green onions, white and green parts, thinly sliced (optional)

1 large carrot, peeled and cut into matchsticks

1 red jalapeno or serrano chile, seeded and minced

1/2 English cucumber, peeled, seeded, and cut into matchsticks

1/2 cup chopped fresh cilantro

1/4 cup slivered almonds, toasted

1 tablespoon sesame seeds, toasted

Instructions

For the Sauce

Whisk all the ingredients together in a small bowl to combine; set aside.

For the Noodles

Cook the soba noodles according to the directions on the package (usually 5 minutes in boiling water). Drain, then rinse the noodles in cold water. Drain again and place in a large serving bowl. Pour the sauce over the noodles, then add the onions, carrot, chili, and cucumber and toss to combine. Add the cilantro, and almonds and gently toss. Top with sesame seeds and serve at room temperature.
