Some 100,000 acres of vineyards line the gently sloping plains of the Côtes du Rhône, a segment of the Rhône river valley that winds from Vienne in the north to the ancient papal seat of Avignon in the south. CDR, as it’s known, is one of France’s largest appellations d’origine contrôlée (AOCs)—areas with their own specific names for wine that no other region can legally use. (Other examples include Bordeaux and Champagne.) The area produces 250 million bottles of wine every year, almost all of it red, and much of it affordable; a decent bottle can be had for $15. This lower price point makes CDR a popular choice for drinking by volume, particularly at a casual bistro dinner. Because the region produces so much wine, the flavors you’ll find may be widely variable, ranging from light bodied to almost syrupy, ultrafruity to restrained and balanced. The core style, however, is known for being medium bodied and earthy, with occasional herbal notes. Traditional côtes du rhônes pair well with hearty dishes ranging from grilled steak to pizza.
As with all AOC wines, there are strict rules for what can and cannot go into a côtes du rhône. In the north of the region, closer to Lyon, growers raise exclusively syrah grapes. (The same varietal is called “shiraz” in the New World.) But farther south, where the bulk of CDR wines are produced, vintners can mix and blend their choice of 23 grapes, including grenache, mourvèdre, and carignan. Wherever their origin, modern côtes du rhônes tend to pack a punch: a 2011 New York Times survey of the genre found the bottles they sampled ranging from 14% to 15% alcohol, as compared to an average of 11%–12% for wines in general.

If you raised a siberian husky pup and a wolf cub side-by-side, giving each one the same food, training, and number of belly scratches, you would still wind up with one tame creature and one wild one. So why the difference? Though both creatures are technically the same species (Canis lupus) and share virtually the same DNA, only the husky's genes are programmed for domestication. The traits we associate with domestication—such as friendliness, calmness, and even floppy ears—have all been selected by humans and passed down from one generation of huskies to the next. In simpler terms: nature created the wolf; we bred the husky.
An example of the domestication process can be seen in a famous Russian experiment using arctic foxes. Beginning in 1958, scientists took an assortment of wild foxes and selected only the few that showed a specific trait—friendliness towards humans. They allowed those foxes to breed then selected only the friendliest of that litter, and so on and so on. After only a few generations, the foxes began to exhibit behaviors never found in their wild ancestors, such as whining and tail wagging. What's more, the domesticated foxes took on new appearances, sporting more juvenile features and spotted fur. Though the strange new foxes might have been considered a new species, they—like dogs to wolves—were just a domesticated version of the same wild foxes.
Although dogs have been domesticated for roughly 33,000 years and cats for 12,000, no one is quite sure how either species came to be domesticated. One of the most popular theories is that only the least aggressive animals were permitted to hang around early human settlements, and over time, humans began breeding the friendliest of the bunch. The advantages were clear: dogs aided in hunting, while cats kept food stores free of rodents and protected the villages from laser pointers.

To be frank, there’s no simple answer to the question of wet versus dry. It largely depends on an animal’s health, an owner’s lifestyle, and whether a pet refuses to eat anything but fondue. Mostly, the question hinges on the important differences between cats and dogs.
Cats are notoriously finicky eaters, though certain evolutionary traits may explain their discerning tastes. Unlike dogs, which can digest a wide variety of foods, cats are obligate carnivores, which means they depend almost entirely on animal protein in their diet. As a result, all their food, dry or wet, is derived from animals to some extent. Cats also face the risk of dehydration because of their poor thirst reflex—the signal the kidney sends to the brain that tells an animal it’s thirsty and needs to drink. Dry food, naturally, has much less moisture than canned food, which consists of as much as 78% water, so using wet food may help a cat stay hydrated, even in the midst of readily available water. Ultimately, the choice between wet and dry food comes down to a combination of the cat’s preferences, affordability, and time. Wet food is more expensive, for example, and spoils much sooner in the bowl—though it also lasts longer on the pantry shelf.
