This month, we’ve decided to make each menu swap theme revolve around typical summer activities. Last week’s theme was Road Trips. This week’s Gluten-Free Menu Swap theme is Grilling. I know, a lot of you grill through every season. But, at our house, the grill gets used a lot more during the warmer months.

My husband and I have had a charcoal grill since we got married. But last year, we finally gave in to buying a gas grill, and I have to admit that I grill more now. When I’m trying to get the rest of dinner prepared, it’s nice that I don’t have to deal with the messy charcoal and wait for it to heat up.

What are your favorite meals to grill? Burgers and dogs? Or, do you like to get a little more creative? We typically grill meats: burgers, steaks, pork chops, chicken breasts, baby back ribs, etc. But sometimes we’ll grill vegetables, Chicken Kabobs with peppers and pineapple, Grilled Avocado with Pico de Gallo, and even Grilled Fruit! I don’t have grilled desserts on our menu this week, but I may try this recipe from Whole Foods Market for Grilled Fruit Kabobs with a Pineapple Mint Glaze. Yum!

Tuesday – Indian Chicken with fresh peaches, served over basmati rice

Wednesday – Pork Tenderloin, Mashed Potatoes, Oven-Roasted Broccoli

Thursday – leftovers

Friday – Grilled Burgers, Sweet Potato Fries, Rainbow Apple Salad

Saturday – Grilled Chicken Breasts simply seasoned with salt and pepper, Wild Rice Salad

Father’s Day – Grilled Beef Kabobs, Potato Salad, Grilled Asparagus

The Girl Who Couldn’t Eat Anything: eating without Gluten, Dairy, Peanuts, Oats, or Meat
Grilled Burgers are on Elisabeth’s menu this week. She eats Veggie Burgers, and says it helps to pre-cook them before putting them on the grill so they don’t fall apart. She’s also looking forward to trying Grilled Summer Squash and  The Pioneer Woman’s recipe for Grilled Veggie Burritos. Also on her menu this week is Pasta Salad with Veggies, Shrimp Stir-Fry, Tacos, Cumin Lime Bean Salad, and Pizza.

Mom’s Plans: Gluten-Free and Dairy-Free

Melissa is planning for a big move this summer, and is trying to keep the meals easy and freeze as much as she can. She has Grilled Burgers planned for the weekend. For the rest of the week, she will be having Broccoli and Beef Stir-Fry, Salmon, Tuna Noodle Casserole, Ham and Cabbage, Rotisserie Chicken, Scalloped Potatoes with Pork, and Salad.

Burgers are also on Lori’s menu this week, along with Chicken Kebobs and Hobo Packs (foil pouches filled with meat and vegetables, cooked on the grill). And, maybe she’ll be grilling the fish for her fish tacos this week, too. The rest of her menu plan calls for Lentil Shepherd’s Pie and a yummy Chicken Mango Salad.

Ginger Lemon Girl: Gluten-Free
So happy Carrie is joining us this week! She will be grilling Chicken to add to her Dad’s Awesome Caesar Salad. Also on her menu this week is Beef Tacos, Chicken Stir-Fry, Cheeseburger Pizza, Pinto Beans, Cheryl’s Lentil Dal and Roasted Cauliflower, and Tuna or Salmon Melts.
