Butter Block’s croissants, homemade Oreos, and better-than-the-original Pop Tart knockoffs have gained quite a following since the pop-up bakery launched last year. The products, which are available on a rotating basis along with other Butter Block treats at select locations in Buffalo, are so sought after that you generally have to arrive early to get your hands on one before they sell out for the day. And with good reason; they are some of the finest baked goods to be had in the city.

But co-proprietor Colleen Stillwell is a skilled pastry chef trained in the art of Viennoiseries. Her dexterity with butter, flour, and sugar is not limited to the aforementioned holy trinity. Nor does your access to Butter Block’s baked goods have to be restricted by the business hours of the bakery’s retail partners.

That’s because, in addition to its core product line, Butter Block offers special-order products perfect for entertaining.

This Thanksgiving, for instance, Butter Block will once again sell its show-stopping pies and tarts, along with other sweet treats and flourishes, for your holiday dessert course. Customers can choose from apple pie with spiced brown butter streusel, lattice-topped mixed fruit pie, poached pear and almond tart, and heirloom pumpkin pie—all of which serve 10 to 12 guests—as well as ginger crème anglaise (12 oz), salted caramel sauce (8 oz), and pumpkin seed brittle (8 oz).



Orders for Thanksgiving desserts will be taken from November 8 through 22, for pick up the day before Thanksgiving (November 25) at a to-be-determined location.



Butter Block has also begun offering specialty cakes for birthdays weddings, showers, anniversaries, rehearsal dinners, and whatever other reason you can think of to celebrate. With their cake service, Butter Block aims to offer something truly unique, so don’t expect boxed mixes or tired rosettes. Instead, Butter Block approaches cake decorating with a simple-is-beautiful, modern aesthetic and takes pride in using high-quality ingredients and classic technique to create non-traditional flavor profiles based on seasonal availability. Examples of previous cakes flavors include:

Brown butter chocolate mousse with cocoa nib cream and 72% dark chocolate ganache

Vanilla bean cake with summer berry buttercream and white chocolate glaze

Raspberry mousse and Italian buttercream cake decorated with candied blood oranges

White cake with peaches and lemon verbena
