This Healthy-ish Skillet Cookie for Two is naturally sweetened and made with healthier baking alternatives, so it is the perfect treat for your date night!

Ingredients
Dry Ingredients:
½ cup Sprouts Brand whole wheat flour
¼ cup coconut sugar
½ teaspoon baking soda
pinch of salt
Wet Ingredients:
4 tablespoons vegan buttery spread, melted but not hot
2 tablespoons Sprouts Brand almond butter
2 tablespoons Sprouts Brand honey
½ teaspoon Sprouts Brand vanilla extract
1 Sprouts Brand egg
2 oz Sprouts Brand dark chocolate (70% cocoa or higher), chopped into chunks
Sprouts Brand coconut oil, for greasing skillet
Top with:
sea salt flakes
Sprouts Brand vanilla ice cream
fresh cherries
Instructions
Preheat oven to 350.
Add your dry ingredients to a medium or large mixing bowl. Mix until well combined.
Add all wet ingredients to your dry ingredients and whisk until combined.
Gently fold your dark chocolate chunks into your cookie batter.
Grease an 8" skillet with coconut oil, pour in the batter and bake for 14-16 minutes.
Let cool for 5 minutes before topping with sea salt, vanilla ice cream, and fresh cherries.

I invited my favorite couple/friends in all of Atlanta over to do some hand modeling/food eating for this shoot. And guess what? They got engaged a week later. So I am obviously taking credit for that. lol. And now I’m on the west coast prepping for another friend’s wedding. WHAT A TIME TO BE IN LOVE. Geeze, it’s everywhere! Even me – the crushingly independent woman that I am – has a person in NY.
Love is so great and so special. And if you have someone, you should really share this Healthy-ish Skillet Cookie for Two with them ’cause then they will really know that you love them. If you don’t, then invite a friend over and dig in – ’cause friend love is just as good.
Having a SO/bae can be really magical. But it also isn’t the only (or most important) kind of love out there. It sounds cheesy and over-preached, but self love really is where it’s at. I fell into the trap of believing that one great love would save me from myself. Like once I fell in love all of my insecurities would be fulfilled by their love. And let me tell you, it DID NOT work out for me like that. In fact being in love caused me to be way more insecure and unsure of myself – constantly in fear that I wasn’t deserving of love.

Here is what I know now – YOU ARE DESERVING OF LOVE. Simply because you have the capacity to love, and want to give it to someone else. You deserve love. No matter your body shape, or skin color, or gender, or sexual orientation, or food preferences, or weight, or political affiliation, or religion, or personal views on La La Land. (I hated it.) Every human being deserves love. (And skillet cookies.)
This doesn’t mean that you will find the love of your life simply because you deserve love. In fact, all it really does mean is that you deserve to be kind to yourself. To treat yourself like a friend, and then maybe one day you can even profess love to your own mind – your own body – you own heart. We all have the capacity to love, and I think that should first be utilized to love ourselves.
With Valentines Day coming up, even if you’re in a relationship, take some time to take care of yourself. Write a love note to your own body – or go on an adventure alone – or make yourself something delicious and healthy. Because love is love is love is love is self love. It all begins from within. And the softer and more gently we can love ourselves, the better we can love the world.
