Today is National Donut Day! You don’t have to miss out on this fun occasion because of food allergies; try this recipe for cinnamon donut holes. It’s free of seven of the top eight allergens!
Cinnamon Donut Holes
Milk-free, Egg-free, Peanut-free, Soy-free, Tree Nut-free
½ cup milk-free, soy-free margarine or other allergen-friendly butter substitute spread, softened
1 cup sugar
3 T. water, 3 T. oil, 2 tsp. baking powder; mixed together
3 cups flour
1 tsp. baking powder
½ tsp. salt
½ tsp. ground cinnamon
½ cup vanilla rice beverage
½ cup apple juice
1 tsp. vanilla extract
Preheat oven to 350 degrees. Line mini muffin tins with paper liners or prepare a donut pan. Set aside. In large bowl, combine margarine and sugar. Add water, oil, and baking powder mixture. Mix well. Set aside. In large bowl, sift together flour, baking powder, salt, and cinnamon. Add to margarine mixture. Blend in remaining ingredients. Fill prepared tins 2/3 full. Bake 15 minutes or until golden brown.
Suggestion: Substitute orange juice for the apple juice or soy beverage for the vanilla rice beverage. Look for juice fortified with calcium.
