Yuca or Casava is very popular in my native country, we make lots of different meals and sweets with it and this fritters are one of the most popular. We absolutely love them and they are very simple to make, the best part of this dish is that you can make tons of the fritters with 2 pounds.

Perfect for picnics or parties, and even just because you want to chance your dinner that day. This is my inspiration for todays #SundaySupper; I want it to share with you a different finger food, a vegetarian option and of course a delicious dish.



We enjoy the fritters with a pink or a tomato sauce, my personal favorite is this tomato sauce the am also sharing the recipe with you, it make the meal complete and give it an extra flavor.

You can also make a simple green salad, they are perfect with it or stuffed some lettuce and make a very creative hamburger.. Yum! I love how one dish change can completely if we just add different sides.

Yuca Fritters Stuffed with Cheese #SundaySupper

Ingredients

1pound

frozen Yuca

1cup

ground cotija cheese

4tablespoons

butter

3

egg yolks

Salt and pepper to taste

3

large chopped tomatoes

1teaspoon

chopped garlic

1teaspoon

oil

1cup

dice onion

1can

tomato sauce

3tablespoons

ketchup

Salt and pepper to taste

1/2 cup

chopped cilantro

4cups

breadcrumbs

3

egg whites

1cup

grated quesadilla cheese

Instructions

For the Yuca:
Place the yuca in enough water and let it cook until soft. Once ready remove the fiber that has in the center. Place in a stand mixer, and mix to cool a little. Add the egg yolks, cheese and butter and mix to combine.

While the Yuca is cooking, make the sauce. In a pot heat to medium low heat, add oil, onion, garlic and tomatoes, cook until tomato is soft, add the tomato sauce, salt, pepper, cilantro and ketchup, cover and cook for 5 minutes.

Heat up enough oil to fry the fritters. Know Grab about 2 tablespoons of the yuca dough, make a tortilla shape and add a teaspoon of the cheese close and cover with egg white and immediately in breadcrumbs, place in a plate and make the rest. Fry for 3 minutes or until golden brown.
Serve warm with some sauce on top.
