How To Make Christmas Cake Decorations Out Of Icing



To make the marzipan, take ground almonds in a bowl with icing sugar and caster sugar.

In a small bowl whisk vanilla extract, brandy, egg, almond essence and lemon juice. Make a well in the center of the sugary ground almonds and ass the liquid, after that mix with the hands to bring together into a paste. Knead for a few minutes until it become smooth and then wrap in cling film and chill for 20 minutes or until needed.

Take apricot jam and mix it with little boiling water, then take pastry bust to coat the whole of the cake with this jam. On the surface of this coat icing sugar is dusted, roll out the marzipan into a large circle. Use the rolling pin to lift the marzipan and carefully pave it over the whole cake and make sure that the center of marzipan circle is positioned on the center of the Christmas cake.

Now with your hands carefully smooth the marzipan over the cake and trim any excess from the base with a sharp knife. Place the cake in a cool place for a whole day or two days to dry it out before icing.

Make the royal icing by putting egg whites in a bowl and adding icing sugar bit by bit, keep stirring until you get a thick dropping consistency. Use a whisk to beat this mixture until it starts to form peaks, then stir in the glycerin. If you like then stir in a tiny drop of blue food coloring.

Smooth this icing all over the cake using a palette knife, Once the cake is covered, wet the cleaned knife in a jug of hot water and use it for giving a smooth surface to icing over the cake. Stick edible snowball decorations around the base and leave this icing to dry overnight before attempting to decorate it.

For decorating the iced cake, roll out the fondant ice on an icing sugar dusted surface and use snowflake cutters to cut different sizes and shapes. You can also use other shape cutter like star shaped cutters. Moisten the back of each of the star or snowflake with water and gently stick to the cake. Dust the cake with edible luster or glitter and you can give a final finish to the cake by decorating it with ribbons or other items.
